If you could, what would it be? I don’t mean streaming previous seasons. I would choose Picket Fences. It was quirky and had a great cast.

I came in to say precisely this.
This is going back a long way, but I’d always wished that “The Invaders” had gotten one more season.
The first season had Vincent fighting the aliens alone.
The second season, he had some allies.
A third could have had him getting some elements of the government to believe. In fact, the last episode of season 2 had a guy from Justice, I think, convinced. So it would have been a natural progression.
More recent: Firefly, of course.
(Both of these obviously presume that additional season(s) are magically added at the point of actual cancellation.)
Additional choices: Tru Calling, Quantum Leap (“The leaps are going to get harder.”)
I’d love to see more of The Adventures of Brisco County, Jr. (Julius Carry, who played Bowler, has died, but Bruce Campbell would probably agree to participate).
Me too. I loved that show, and sadly it didn’t get the chance it needed to have. 
Of OLD shows, I wish they could do a modern treatment of “Soap!” What they would do with the modern concept of the internet meme would be fantastic…
And what about Chuck and Bob?
I’d like to see “Quark” get another shot.
