By “bring back” I mean return to new first-run episodes in prime time on the networks they were originally one. This is to try to avoid mentioning shows that still run in reruns and syndication.
If the show just stopped airing new episodes, that would count for a “bring back.”
My first choice would be Terriers, but I’d also like to see a new season of:
Brimstone. Fox, as is their usual, didn’t give this show a chance to find an audience, and in fact killed it right after a major plot point was revealed.
A few good ones already mentioned. My all time favourite is Deadwood, closely followed by Firefly.
I kind of want to say Buffy, but I liked where they left it. (I dislike where the comics have gone plotwise).
There was a one season show in the late 90’s called Now and Again, which I really enjoyed but it only got one season.
Eureka. Yes, the new season is just starting, but it’s been canceled and this is it. Bringing it back wouldn’t involve much more than the suits at Siffy taking their heads out of their asses.
Unfortunately, Fireflycan’t come back. Serenity answered too much and changed the 'Verse, and if it resurrected it would mean an end to Castle, L.A. Complex, Homeland and a lot more.
I loved the quirkiness of the show and the crazy characters, enough so that I rewatched it recently on Netflix streaming, but rather than bringing it back I would prefer that they had ended it earlier. The last episodes just wandered off into la-la land for me.
That was one of the few shows that I watched exactly like most people watch most TV shows – because it was mildly entertaining and I didn’t have anything else to do. With most shows, I either am a devoted fan or have other things better to do, but Keen Eddie was lightweight and watchable.
This is actually more a list of shows I wish were never canceled since most are from long ago and restarting them up now would be impossible/impractical:

I am preemptively including Cougar Town because I think it’s doomed.
Legend of the Seeker (it was just getting good).
Star Trek Enterprise (Seasons 1-3 were uneven at best but season 4 embraced the Original Series. I would have loved to see what Season 5+ would have brought).
Clerks The Animated Series (which actually may be coming back).
