I'm hungry. What's for dinner?

The chief cook and bottle washer has informed me that it’s to be boneless chicken thighs stuffed with peppers, shallots, crouton and cheese then rolled in light crumbs and baked until crispy skinned, crimini mushroom pilaf and zucchini sauteed in butter and garlic. I’ve also been informed that it’s perfectly acceptable for me to take a nap until dinner is ready, but I’m still fulminating on that option…

Glazed chicken grilled on a cedar plank with portobello mushrooms marinaded in a quick zinfandel sauce then grilled and stuffed with herbed goat cheese. Along with some wild rice. Paired with a dry rosé.

I have become obsessed with the cedar planks lately.

I haven’t decided. There’s some boneless pork cuts in the fridge, so I suppose I should use those… probably a spinach salad with hard boiled eggs of some sort, since I should use up those greens…

Cripes, I don’t know. I’m lazy tonight. Maybe I’ll just pour that big bag of Cadbury Mini Eggs into a big bowl and eat those, and let hubby fend for himself. That sounds like a good idea.

Me, I had a burrito from the local burrito joint. Pathetic. But tasty!

Just finished off my bowl of Starbucks mocha almond fudge ice cream.

My hubby stopped by the market on the way home and brought NY steaks and a loaf of fresh French bread. I have some red-skinned taters a-steamin’ and there’s some tomatoes ripe (for store bought) on the counter.

But we’re out of ice cream. Darn.

Here, sweetie. I don’t have raisins, but I’ll push some homemade chicken soup through teh internets for you. I think it’ll squirt out through the ethernet port, so be ready.

Tonight was just pizza and salad, but tomorrow will be a slow-cooker sausage/potato/tomato sauce concoction. Yum.

I had two bowls of Grape Nuts Flakes. Nothing easier!

Porcupines are a type of meatball which include rice in the mix and are baked in tomato sauce. The rice gives it a porcupine-y look. We usually serve it with veggies and some noodles. One batch makes enough that I can freeze for other nights when I feel even less like cooking! :slight_smile:

Kraft Sharp Cheddar mac n cheese, tasty sausages (Mitchells, for you prairie folk), and broccoli. I’ve got a bad shoulder today so cooking is difficult - hell, everything is difficult. Maybe cereal tomorrow if Jim doesn’t feel like cooking. :smiley:

We ended up with smoked sausage on the grill and Kraft Deluxe Mac N Cheese. Son ate the whole box of Mac n Cheese and the entire smoked sausage. Husband had fillets with bacon wrapped around their edges, and I had cheese hot dogs.

That’s good because tonight I will be concocting something out of the contents of my fridge/vegbox. That’s carrots, parsnips, onions, tomatoes, turnip, swede, cabbage, cauliflower, spinach and chillies. Oh, and it needs to contain rice too.

Luckily I have the rest of the afternoon to work out the details.

It’s been over 30 years and memories of that guy still make me smile. Glad I could spread it. :slight_smile:

You’ve clearly married a man of good taste and discernment. Stouffer’s agrees with him; their fish fillet is paired with mac and cheese.

We’ll probably do raita - a tomato & cucumber salad in yogurt. That way we’ll have plenty of room for cookies & ice cream.

Tomorrow we’re having slow-cooker Moroccan meatballs.

The little one will be having baked chicken and green bean puree. Mmm, mmm good.
