Lazy Lazy Sunday here. We went for breakfast, I skyped with the parental units, washed the sheets on our bed. mr ems has a port butt in the smoker so pulled pork for us tonight with some roasted veggies.

Lazy here, too. The Fahr Depahrtment advertised Brekkies today, so we went. They didn’t show up. :mad: We wound up at IHOP, and were served by Eileen the one-legged waitress.

A nap ensued afterwards, then I did a load of laundry, made dog food, and I’m now cooking a batch of Fat Club[sup]tm[/sup] Sausage and Shrimp Jambalaya for munch this week.

I foresee another load of laundry in the next few minutes, then perhaps Sunday nap Part Deux.

With all this excitement, you’d think I was retahred like Mooooooooom. :stuck_out_tongue:

Fat Club Sausage and Shrimp Jambalaya

Ingredients

1 Tbsp regular butter
1 large uncooked onion, chopped 1 medium green pepper, seeded and chopped
3 ribs raw celery, chopped
3 cloves garlic, minced
1 lb uncooked turkey kielbasa, cut into 1/4-inch slices
1 1/2 cups uncooked white rice
28 oz crushed tomatoes
14 1/2 oz (1 can) fat-free chicken broth, reduced-sodium
3/4 tsp dried thyme
1/2 tsp cayenne pepper
1 pound cleaned and cooked shrimp, medium

Instructions

Melt the butter in a Dutch oven over medium heat. Add the onion, bell pepper, celery, and garlic. Cook, stirring occasionally, until softened, 7–8 minutes. Add the kielbasa and cook, stirring, 3 minutes longer.

Add the rice and cook, stirring frequently, until lightly toasted, about 2 minutes. Add the tomatoes with liquid, the broth, thyme, and cayenne; bring to a boil. Reduce the heat and simmer, covered, until the rice is tender, about 30 minutes. Stir frequently.

Add the shrimp to the mixture and cook until just opaque in the center and all the liquid has been absorbed, 5–7 minutes longer. Yields 1 1/3 cups per serving.
Notes

Small chunks of skinless boneless chicken breast can easily be substituted for the shrimp and/or the kielbasa, or you can use crawfish instead of shrimp, and a cup of thawed frozen peas can be added with the shrimp.

Keep a close watch while simmering. The jambalaya sticks to the bottom very quickly and easily.

I was hoping for a nice hike with Culinary Boy, but he decided to be a mule so I left him at his brother’s place. I did manage to finish Katy Cat’s Kitty Blanket, though, so there’s that. No pictures because I didn’t think of it. I might get Computer Boy to take some. It came out a little trapezoidal, but it’s a good size for a kitty.

I am a tired, achy mumper, but I had a good weekend with my Mensa buds in NJ. I laughed so hard at one point, tears were streaming down my face, I’d stopped breathing and was just shaking, and my friends couldn’t tell where my pink shirt stopped and my neck and face began. That night I had the best sleep in a looooooooong time. And everyone was so kind and understanding about my current (lack of) financial sitch - Cousin paid for the gas to get there, the room, and today’s brunch; and 3 separate poker buds offered to stake me so I could play. I thanked each for their generosity, then graciously declined. So in spite of not properly supporting my back last night as I slept and therefore achyachyachyachy, it was a good weekend.

Howdy Y’all! Feelin’ kinda achy and chilish right now. Plus a little bit of fever. Started feelin’ this a couple hours ago. Weird. Maybe I should dope myself up with knockout stuff and go beddy bye soon.

In other news, we deheathenated, had brunch and then I went to :eek:The Maul:eek:. I bought four new pairs of pants, three khaki and one dark blue. The pants were originally seventy bucks each but I got 'em on sale for twenty-five bucks each. Score!

Yays, boos, hugs, gropes, noogies, wedgies, awwwws, how you doin’s as needed all around.

Glad you had such a good weekend, rosie. There’s nothing like feeling all supported like that to make you feel warm and fuzzy.

Bobbio, that sounds like what I put in my jambalaya, 'cept I go about it differently.

Speaking of food, here’s a salad y’all oughta try:

Wifey made this up, I think.

Gather together your usual salad greens.
throw in a big handful of dried cranberries.
throw in a handful of chopped nuts. Pecans or walnuts are good, but we’ve been using hazelnuts 'cause they grow 'em around here.
Toss in some bits of goat’s cheese. It can be gooey and hard to ‘crumble’, but break it up as best you can.
Quarter a nice, ripe pear, Bartlett or D’anjou would be good, then slice thinly into the salad. You can peel it first or not. We don’t.
Dress with a nice sweet dressing. We like Raspberry Walnut Vinigarette best for this, or Ken’s Steak House Vidalia Onion.

That’s it. Best salad ever.

I’m surprised next week’s MMP isn’t up. I think I’ll save the summary of my awesome weekend for it. In summary, sex is awesome, Rick is nice, and no, I didn’t have sex with Rick. Also, miso makes food better.

Added Jambalaya recipe (there are 3 now) and salad and my curried fruit from yesterday. Made more today because I only got a really small serving and it was way too yummy. That salad sounds very tasty, Bumba. I love salads that involve fruit and nuts.

Where is everyone? Anyone ready to start us off for a new week?

Well, I was all set to get my car worked on tomorrow but the guy who was going to do it got into a fight tonight and, according to Culinary Boy, his face got all busted up. I assume that means stitches. So it’ll have to be later on this week. :smack:

So, Dad has his doctor’s appointment yesterday, and the official word came down: No more driving.

We all heaved a sigh of relief. The doc made it about his health, not about us being scared half to death. Dad accepted, but he seems to view this as the first chapter of his death as he’s started to talk about updating the will and making decisions about how he wants his remains handled.

I thought I’d be relieved, but mostly, I’m sad. He could look at taking the bus, at walking more, at asking the family for help, but he won’t do any of that. He’s going to sit alone, feeling sorry for himself, probably drinking. But, hey, at least he won’t be endangering anyone else’s life.
