Oh wait, one more (for breakfast or tea this time): Pillsbury Reduced Fat Crescent rolls. Unroll triangles, put a little jam in and maybe a berry or two, form into individual bundles, poke with a fork and bake on a parchment lined sheet. Drizzle with powdered sugar glaze and eat warm. Berry turnovers.
A little bit of Nutella (like 1-2 tsp) added to a bowl of oatmeal is AMAZING. I have no idea what the calorie count is (it will depend on how you make the oatmeal), but it is REALLY good.
I also love pumpkin oatmeal in the fall. It can be completely fat-free, and you get a double-dose of fiber from it!
Weight Watchers one-point chocolate muffins… I don’t know the calorie count, but for one point, it can’t be over 200. They are VERY GOOD too, much better than you might think.
For a lighter cake, use 1 box chocolate cake mix, 3 eggs, and one can of pumpkin puree. Cut the resulting cake into 16 pieces, for 140 calories apiece
And dare I point out… if you make Joy of Baking’s browniesand cut the pan into 16 pieces like they recommend, the brownies are only 180 calories each.
As per their latest ad campaign, I like taking tubes (these plastic tubes of fruit yogurt aimed at kids) and putting them in the freezer. It makes for a really creamy, smooth freezie. 40 calories.
1 tsp Nutella is about 50 calories, as long as you’re honest about serving size. 1tsp might seem like almost nothing, but it has a strong flavor so a little really does go a long way!

I’m actually making it tonight or tomorrow night; this weekend my local grocery store AND Wal-Mart in my hometown were out of nonfat condensed milk (isn’t that such a weird thing to be out of?)
Errr. danger Will Robinson - pumpkin pie calls for evaporated milk and it is NOT the same as condensed milk. The latter has tons of sugar and has a paste texture - the former is just milk that’s slightly “thicker” than normal (abut the same as heavy cream).

Yep, just a brain fart all right I actually found it in Whole Foods (Carnation brand, not Schmancy Pants), of all places, and still 1/2 the cans were gone. Apparently a lot of people in Pittsburgh are making Pumpkin pie.
If you want something without nasty-ass fake sweeteners, something not full of empty carbs and calories, and something with fiber and vitamins, inventive smoothies with real yogurt are my favourite. None of this bottled orange juice/strawberry/banana smoothie stuff.
Frozen raspberries have lots of fiber, real yogurt (as in not the gross gelatin-set key lime pie flavoured garbage, real greek style yogurt with healthy probiotics and no gelatin in the ingredients list) is fantastic, fresh ginger gives it a kick, and anything extra like pomegranate seeds or a fig or some mango or really whatever you want means you don’t ever have to have the same thing over and over again. Now I’m into green smoothies. They are a delicious dessert for me, while basically being a blended salad.
The more sweet carb-based desserts I eat, the more I want. If I get in a rut making muffins, which are basically just oil and flour and sugar with other stuff, all I want to do is eat muffins. But when I kick that habit for fruit smoothies, which are sweet enough to feel like dessert, then I crave more fruit smoothies and more vegetables.
And maybe it’s the pastry chef in me talking but… Cool Whip? Please, eat real whip cream, just eat less of it!
I appreciate the eating whole foods/real foods/whatever lifestyle. That’s how my meals and snacks are. I am the carbon copy of my father in that respect. Filet of salmon, mounds of veggies, multi ingredient salad with light vinagrette, side of quinoa…and CAKE! or PIE! or apple pie a la MODE! I can’t stress enough how the rest of my diet is awesome, but I feel like I “deserve” a real dessert. Substitutions are awesome, like** Hello Again**'s pie.
But if I buy a can of whipped cream, within two days it’s been sprayed directly in my mouth. Cool Whip, I have more restraint. And fake sweeteners are the reason diabetics don’t go on murderous rampages.
Yeah, upon re-reading my post, it sounds really preachy, which is not what I was going for. And my aversion to natural sweeteners is like my aversion to Red Bull style energy drinks - I get this weird buzzy nervous high feeling.
I’m more into the smoothies because, like I said, having any baked goods in front of me and I’m nom-nom-noming away like the cookie monster. And I certainly think cake and pie and all that can be part of a healthy whole foods lifestyle, I’ve just been brainwashed by the people I’ve been around to think that moderate amounts of real ingredient desserts are much better for you than large amounts of fake food desserts.
But again, I really wasn’t trying to be the person who swoops in all preachy! Except for the Cool Whip thing. shudder
No worries on the preachy front. We all get that way about food - by “we”, I mean the people who take the time to think and decide consciously what to eat. Not many do.
Just posting an update - Hello Again, I tried the pie the way you said. It was fantastic. If I make it with whole-wheat crust I divide into 8 but…if I make it without, well, I divide it into 6
I also really like these Individual cherry-blueberry trifles from EatingWell. A word to the wise - regular almonds will taste…healthy, whereas toasted taste sinful! I may make these for a potluck tomorrow, but in a regular baking dish.
