I am usually not a mayo fan, but a “good eats” episode that i saw several years ago had Alton doing his thing on burgers. The idea is to toast the buns and then add mayo to the bottom bun right before putting the hot burger down. The burger juices and the mayonnaise combine to great effect. I always have mayo on burgers now.
I would hazard a guess that this is about the mayo forming a barrier to prevent burger juices from sogging out the bun.
I’m willing to try this once. But if I still loathe mayo-burgers, you will hear about it.

I love my burger with mayonnaise. It’s not entirely necessary, but I’ll definitely notice its lack, and if I get served a mayoless burger, I’ll wait to eat until the mayo comes.
This doesn’t apply to fast-food burgers, which I think are pretty nasty already and which therefore don’t really need to be made better; I’ll just eat those with whatever crap they’re served with.
Just like your second paragraph but the exact opposite. If I was to make a burger, it would be mayo free. That doesn’t apply to fast-food burgers, which are pretty nasty already and, therefore, I’d eat them however they’re served (which is usually with mayo).
