Tortellini Alfredo, by a huge margin.
It always has something to do with pasta. It frequently has olive oil, artichoke hearts, and sauteed mushrooms in it.
If I decide to be a meat eater, I cut Italian sausage into discs and toss that in as well.
Another vote for pasta! And a very light “sauce” would do–if lemon sauce is not available. Garlic, of course. Tomato bits–fresh or canned? Slivers of green onion? Red pepper flakes? Lots of parmesan…
I love lasagna florentine (with spinach and other veggies) and eggplant lasagna.
We have lunch almost every weekend at Woodlands, a vegetarian Indian restaurant in a DC suburb, and I love almost everything on their buffet.
I am also a big fan of all things pasta (being of Italian descent), all things rice (just had really good veggie paella recently), and all things potato (any potato thing can be a meal in my grubby hands).
Also, vegetarian chili.
And bean-and-rice burritos.
(Sheesh. Maybe I should just be a vegetarian.)
Spinach lasange.
Tons of things you can do with pasta
and vegatables. Pasta prirmavera. Pasta mixed with fresh tomatoes ( I recomend cherry tomatoes}
Samosas.
In fact Asian and Indian recipes would be a good place to look.
Vegetable lo mein.
Macaroni and Cheese. Comfort food!
You mean the kind you eat right out of the pan, standing in front of the stove and heaven help anyone who wants a bowlful? Yeah! I like that too!
Popcorn!

Oooh! I can’t have just one favorite. Mac and cheese, tortellini alfredo are wonderful, as are stuffed artichokes (why yes, I can make a meal out of a couple of chokes). And I most seriously love masala dosas with the curried taters and lots of really hot peppers inside. Oh, and bean burritos with cilantro, hot peppers, sour cream and onion.
Mmm, lentils. I made a big pot of sweet potato and lentils in my slowcooker the other day. Simmered them for hours in a little pineapple juice with onions and cumin and chili.
I love to eat veggies right out of the garden - steamed a little bit - squash, zuccini, cabbages, eggplant - with a big ole ripe tomato, and a little salt - n- pepper. Pass the cornbread, please !!
I’m fond of a particular salad recipe:
1 cup spinach
1 cup shredded carrots
1/8 cup chopped walnuts
1 tablespoon apple cidar vinegar
A generous amount of garlic powder
Put the spinach in a bowl, then the carrots, and then the walnuts. Put on the garlic powder, and then add the vinegar.
