Ingredients

1 cup quick cooking grits (not instant)
1/4 cup (1/2 stick) butter

In a small pot, bring the water, milk, and salt to a boil. Slowly stir the grits into the boiling mixture. Stir continuously and thoroughly until grits are well mixed. Let the pot return to a boil, cover with a lid, lower the temperature, and cook for approximately 30 minutes, stirring occasionally. Add more water if necessary. Grits are done when they have the consistency of smooth cream of wheat. Stir in the butter and serve.

Shrimps and the fixings to round out the grits
You’ll need:
1 lb or de-veined, de-tailed shrimp
1 lb of mushrooms
green onions to taste
chile flakes
hot sauce
cheddar cheese, sharpness to taste
bacon, 1 lb ought to do
In a frying pan, add cut up bacon and cook until done. Add chopped up mushrooms.
Meanwhile in a separate pan, prepare John Mace’s grits. Add: hot sauce, flaked peppers, and as much cheddar cheese as you like. Keep on the heat and stir occasionally.
When mushrooms begin to turn crisp and brown around the edges, stir in the shrimp and cook until the shrimp turn red.
