Tryin’ to sneak in extra entrees, eh? Why I oughta…
The answer to this question really depends on where I am an what the occasion is. But let’s pretend I’m at a classic Wisconsin supper club.
Let me order a brandy old fashioned from the bar while I look over the menu.
To start I’ll have a green salad, vinaigrette dressing.
For the entree I’ll have the prime rib special (since we’re pretending, we can pretend it’s Saturday). With garlic mashed potatoes and roasted asparagus. And a glass of the house red, and also a glass of water.
Traditionally in supper club culture one would order something like a grasshopper after dinner, but I’ve already had two drinks. I’ll just have a slice of cheesecake.
Steamed asparagus with a little butter
Grilled sardines with saute potatoes
A couple of French cheeses - goat and blue - with French bread
I’ll have a nice heavy continental beer or two, primarily to go with the cheeses - Kronenbourg 7.2 Blonde, say.
If the sardines are all gone, I’ll have the skate wing with beurre blanc. Thanks.

Today, I’ll go with
Appetizer: Scallops in a light garlic sauce with bits of bacon and shallots
Entree: Prime rib, medium rare, with grated, fresh horseradish
Sides: Brussels sprouts, roasted, with a balsamic reduction and roasted parsnip
Beverage: A Chilean Cabernet Sauvignon (that I haven’t found in several years) made from grapes descended from French grapes not affected by phylloxera.
Dessert: Panna cotta, with apricot preserves
Well, you can’t have chicken-fried steak without eggs, and they’re certainly not a side. I say it counts as one entree.
See, when I did “Steak And Eggs”, I was operating under the assumption that “And Eggs” would count as one of my sides; if I can get the “And Eggs” for free, then — I dunno, maybe put me down for that thing where you eat sushi off a naked lady’s body?
“Steak and eggs” to me is a singular entree, not an entree and a side. But I know that as a breakfast dish. I’ve never had chicken fried steak with eggs, but I’m not a Southerner. I thought that was just served with white gravy, typically. Is chicken fried steak normally served with eggs?
In an attempt to spend as many dollars and calories as possible…
App: Caesar salad
Entree: Surf (whole lobster) and Turf (Beef Wellington)
2 sides: Twice baked potato, armadillo eggs
Drink: Dom Perignon
Dessert: Crepes Suzette
Appetizer: Ceviche (chef’s choice)
Sides: Carrot salad, roasted Brussel sprouts
Entree: grilled red snapper
Beverage: Mojito
Dessert: brownie sundae
This works for lunch or dinner. Breakfast would be tough to narrow down.
Appetizer: New England Clam Chowder
Entree with 2 sides: Lobster roll with coleslaw and French fries with malt vinegar
Beverage: Local IPA
Dessert: Chocolate brownie wirh vanilla ice cream.

As a breakfast, definitely. I’d consider chicken-fried steak and eggs to be a valid permutation of the “meat and eggs” breakfast, just like ham and eggs, or bacon and eggs, or burger patty and eggs, or Spam, Spam, Spam, Spam, Spam, Spam, Spam and eggs.
You missed a Spam.
Why narrow it down? I think we should post our food desires for a week. My cravings change every day.

Appetizer: Kumamotos with mignonette
Entree: Veal Chop
Sides: grilled asparagus, potatoes Anna
Drink (cocktail): gimlet (gin, of course)
Dessert: the raspberry creme brulee I had at a restaurant on the Big Island that is no longer there (the restaurant, not the island).
I wanted something that’s not got much Spam in it.
Appetizer: French onion soup
Entree: Spinach salad with blue cheese, steak, sourdough croutons and balsamic vinegar (the good stuff, of course)
Sides: Walla Walla onion rings and beer battered mushrooms
Beverage: Negroni
Dessert: Blackberry pie with small batch vanilla ice cream
Appetizer: Portion of brie en croute
Side: Braised asparagus stalks
Entree: Grilled salmon with dill seasoning
Beverage: Champagne, but not too dry
Dessert: Tiramasu
I’m adding a breakfast option because you’re 100% right!!
Appetizer: seasonal fruit medley
Entree: seafood (chef’s choice) eggs benedict
Sides: breakfast potatoes, crisp (but not burnt) bacon
Drink: mango mimosa
Dessert: pain au chocolat
I served almost this menu for a brunch party about a week ago, except no seafood, ham instead of Canadian bacon, no bacon and instead of mango Mimosas I offered regular Mimosas with a scoop of sherbet for those that wanted to ruin enhance their sparkling wine with it. For dessert I made a chocolate cheese cake.
So really, not much the same, but your menu made me remember it.
