Pineapple Casserole --- What the Hell?

I’d be curious to hear the story. I have no idea where it started, but it seems to have spread quite far. Even what I consider the epicenter of (pork) BBQ country – the Carolinas – do it. (Though, personally, I almost always ask for slaw on the side, as well as sauce.)

I live in NC and it’s generally served on the side here, though some places will ask if you want it on the sandwich.

If it tastes at all like mayo someone fucked up. I’ve made it lots of times and no one I’ve sprung it on has ever pegged that it has mayo in it.
