I’ve just recently discovered what might possibly be my favorite late-night snack of all time. Best of all, it’s so easy.
Just peel a banana and chop it into about 6 pieces. Next, prep some just-add-water pancake batter. Coat the banana pieces in the batter and fry in some cooking oil until golden brown. The bananas are crispy on the outside and sweet and creamy on the inside. Delicious. It’s great after a night of drinking.
So, tell me. What are your favorite, very easy snacks?
I’m going to have to try the banana thing, that sounds yummy.
For a quick and protein-y snack, I like to take a can of chickpeas (AKA garbanzo beans) and fry them in some olive oil with garlic and pepper until they’re brown and crispy. That’s good eatin’.
Wow, that banana recipe does sound delicious, nearly delicious enough to make a run to the open-24-hours grocery store
Whole Foods around here sells a heavenly brand of yogurt called Nancy’s. It has a whipped/spongey texture which is pure bliss. It’s the only reason I can really justify going to Whole Foods. Anyway, I’ve only tried the plain (flavored yogurt is evil), but if you can mix a bit each of sugar, cinammon, bananas, and strawberries in a bit of this spongey goodness… pure bliss.
A single fried egg on a single (or half) slice of bread is a good treat as well.
Popcorn–ever since my popper broke, I’ve been doing some experimenting: you can get “single serving” popcorn by putting in a couple of tablespoons of kernels or so in a lunch bag, taping the lunch bag shut, and setting the microwave on high for 1:40-1:50. Took me a lot of smoke to figure that one out. If you’ve got a good garlic seasoning, a bit of cooking oil and some of that will satisfy any garlicky-salty cravings at a low calorie cost. I don’t dare do this very often due to stinkiness.
I make a quesadillia using cheddar cheese grated onto a good quality flour tortillia (home made if I can) and putting another tortillia on top if it. Microwave for about 20-30 seconds depending on your machine. Eat with a dipping sauce made from ranch dressing mixed with some Pace medium salsa. Mmmm!
Well, this kind of takes low-maintenance to the extreme, but it’s refreshing, filling, and healthy. Open up a container of Dannon coffee yogurt. Put some red grapes in the container. Eat those with a little yogurt in your spoon. Guzzle and repeat. It’s incredibly delicious-- you owe it to yourself to try this one. But as far as I can tell, the yogurt has to be Dannon coffee and the grapes have to be the rounder red kind. The flavors and textures perfectly complement one another.
Potato chips, especially the extra-crunchy, fried in peanut oil kind. Open bag. Eat. Best with an icy cold glass of Diet Coke! Yum. (. . . and easy, too.)
Chop up a big potato into little cubes. Get a pack of powdered Ranch dressing and about a quarter cup of oil. Shake the oil, powder and potatoes in a bag until they’re well-coated. Dump on a cookie sheet and bake for 30 minutes at 350.
Those Ranch Potatoes sound great, I’ll have to try that today. I ahve some bacon in the fridge, is there some way I can incorporate them into the recipe?
This is my favorite summer snack. Slightly more work than the above, but still incredibly easy:
Peel, seed and slice some cucumbers
Slice up some yellow onion, preferably the sweet Vidalia type
Throw in a bowl, cover with cold water
Add 1/4 c. of plain white vinegar
Refrigerate for about 1/2 hour - the longer it sits, the better the flavor
It reminds me a bit of those cucumber salads they sometimes give you at sushi restaurants. The vinegar gives it a nice tang, and you can eat gallons of the stuff without gaining an ounce (though watch it if onions make you gassy). I usually have a batch in my fridge at all times June-August.
10- 15 glasses of beer
1 large flour tortilla
1 jar bread and butter pickles
butter
Drink the beer.
Heat the tortilla for a few seconds in the microwave until it’s warm.
Slather it with butter.
Heap as many pickles on it as it will hold.
Fold in half and eat while the pickle juice runs down your arm.
