So how do you like your eggs?

I generally eat eggs for breakfast once or twice a week, just because I really like eggs. The health benefits and detriments of eating eggs can be debated, but that’s for another forum. When you eat eggs, generally what is your preference on how they are prepared? Sure you may add things to them, but what is your preferred cooking method?

I eat them many different ways and will switch back and forth. My current personal favorite is sunny side up. I like for the yolks to be medium, where there is still a bit of runny to sop up with a piece of toast. I also usually put a dash of tobasco sauce on each egg for good measure, along with salt and pepper.

Sunny side up. It’s just perfect. They look badass. You can put that bitch on a piece of toast and eat it. You can switch shit up and dip the toast in it. Few people know this but the term “ambrosia” originally referred to that golden sac of awesome found at the center of a delicious sunny side up egg. The more you know.

I voted “over-easy” but that’s only if I cook them myself.

If being cooked by anyone besides myself, scrambled.

I voted omelet but scrambled is right there too. They have to be cooked HARD… anything runny left in… bleh.

I voted over easy, but it really doen’t matter to me as long as it has a runny yolk. I don’t like hard yolks, and even if I overshoot and get a medium yolk, I’m disappointed.

When I make eggs for myself, I generally make them two ways: either pan scrambled (eggs are scrambled in the pan, but not made a homogenous mess like a typical scrambled egg that is beaten in a bowl beforehand) or steam basted eggs. My steam basted egg is basically just a cheat for over easy. Instead of flipping the eggs, I add a tablespoon of water to the pan towards the second half of cooking and cover the eggs with a lid.

I will also poach them from time to time in water (although this usually takes too much extra time for me to bother) or in a spicy tomato sauce, which is great for a lunch or light dinner.

I like a variety of ways, but in restaurants usually order over easy. If I’m making them myself I might go for poached, omelette, or scrambled. Restaurant omelettes and scrambled are usually way too hard and don’t have that creamy texture I like.

Scrambled with Velveeta and Tabasco.

I prefer an actual omelet (and not scrambled eggs with things mixed in, which are often dubbed omelets). My favorite is made with a filling of various cheeses (good sharp cheddar, emmenthaler, and parmagian, usually), with a little pesto and few drops of hot sauce in the egg.

Second is a good poached egg (still runny and actually poached by dropping it in water) on a buttered English muffin.

I also like fried eggs – sunny side up at home, over easy in restaurants (who tend to undercook the eggs by not covering them when cooked.

Hard cooked eggs are nice for lunch and snacking.

Next comes scrambled - used to be my favorite, but I grew tired of them.

Over-easy.
No runny whites and just enough liquidy yolk in the middle. Season with a little salt and a lot of pepper.
2 slices of toast, buttered and cut diagonally. Poke a yolk with the corner of a toast piece and use it to sop up the goopy yellow; repeat with the other yolk. The rest of each egg goes on the remaining toast slices like little open-faced sandwiches.

I eat eggs prepared pretty much any way, including raw whipped into a smoothy. But my favorite is Eggs Sardou.

Scrambled in with hash-browns and bacon bits. And hot sauce.

Over easy on top of hash browns (or on top of biscuits and gravy) is my favorite. Sometimes steam basted if I’m feeling virtuous. Scrambled with cream cheese, served on a crusty toasted roll (or croissant) with a piece of bacon ties with over easy.

I forgot my ultimate comfort food – soft-boiled eggs – actually I coddle them for about eight minutes, so they’re hardly cooked at all, just warmed.

Over easy and eaten on top of toast.

Sunny side up always results in some runny egg white. Can’t stand that.

None of the above. Don’t like eggs.

So, seriously, why did you post in a thread that’s clearly meant for people who like eggs?

I voted over med. I actually prefer over easy, but I’ve found that too many chefs/cooks leave the white too loose if I go that way.

I on the other hand, cook a perfect over easy egg.

I like mushroom and cheese omelets, but I also like over medium. Just slightly runny, so I can put it on my toast and eat with a fork.
I also like Eggs Benedict.

Hard scrambled. I don’t like the texture of soft runny yolks. Hard boiled are good too, but I don’t make those as often.
