So, I finally broke down and tried the jalapeno jelly...

RED PEPPER JELLY
6-8 RED PEPPERS, to make 1 cup juice(see below)
3 cups SUGAR
1/2 cup VINEGAR
2-3 drops TABASCO
red food coloring, if desired.
1 pouch LIQUID CERTO
Add juice, vinegar, sugar, tabasco, coloring. Bring to boil. Add Certo, boil hard 1 minute. Pour into jars. Process 10 minutes.

To extract juice: chop peppers into a fine dice and place in a strainer over a bowl overnight. Press peppers to squish the juice out in the morning. Or, use a juicer if you have one, although it makes the juice cloudy. I sure don’t care if it’s cloudy.
