So, what'd you have for dinner?

Last night I had a seasoned quinoa blend, seasoned collard greens and corn bread. Despite the entire meal coming from a can or a box it was delicious! I’m having some of the leftovers for lunch today.

Pasta with homemade pesto (it feels like summer, may as well eat like it is). 4 cups basil, 8-10 medium cloves of garlic, sometimes more, 1/2 cup pine nuts, 1/2 cup walnuts. Toss in the food processor and chop. Add 1 cup freshly grated parmaggiano and enough olive oil to get the desired consistency, and 1/2 tsp. salt. Yummy. It even freezes well. We had ice cream for dessert.

Since my friends are coming over in an hour or so to make Chinese desserts, I think for dinner I’ll have some Haagen-Dazs strawberry ice cream. (I did have noodles with begetables and soup earlier this afternoon, and I’m not really hungry for anything else)

Beef vindaloo, saffron rice, and brocolli raab with asafoetida and chilis

Last night I made dabrota and I seasoned pork chops, roast potatoes with lemon and garlic and steamed spinach with soy sauce and sesame seeds. It was quite amazing, considering that we barely cook regularly.

Haven’t made dinner for tonight yet, but some of the other entries in this thread are making me hungry. However, having expended all my cooking energies into that one meal, I fear I will be eating Kraft Dinner for months.

Tri-tip.

Who here has ever had tri-tip?

I’d heard it was a popular cut of beef in the west, but that most of us effete Easterners never got to see it. I was amazed to find tri-tip, cut into steaks, at the Park Slope Food Co-op today .

I grabbed a pound of em up, seasoned them with salt, pepper, garlic, onion, and oregano, and threw them on a hot grill. Served them with All-American side dishes of baked potatoes with sour cream and steamed broccoli…plus a piece of grilled salmon filet for my wife, Miss No-Fat.

VERY nice beefsteak. Lean, yet juicy. While it made a fine grilled steak, I’m keeping it in mind for Beef Stroganoff, fajitas with tortillas, and Asian stir-frys also.

I cooked, and I cleaned up. I’m such a saint.

A cookie. And some ice cream. And beer. It’s been a looooong week down on the ranch.
