I turned some pork cutlets into a nice schnitzel, served with homemade applesauce, air fryer green beans, and Pinot Grigio.

When I was a kid, my mom would make a cheese spread using various end pieces of cheese that we had in the fridge. Mostly stuff like gouda, mozzarella, mild cheddar, edam, etc…
Grate the lot on coarse box grater, add a dollop of mayo and a clove or two of grated garlic and fine chopped parsley. Mix by hand into a stiff dough like consistency and keep refrigerated. Once the garlic has had a chance to do it’s thing (usually 24 hours), spread it on toast, pita, toasted bagels, crackers… comfort food at its finest.
I’ve got a cheese drawer that is full of cheese ends and baguettes that beg to be sliced and toasted. Top with sliced tomato and maybe a slice of ham. That’s dinner.

We had pork tenderloin last night, so if I can bestir myself to go to the store for bread, we could have Cuban sandwiches tonight. Or I could blow off going to the store and do frozen pierogies, that sounds much more likely.
What we commonly call perogies are what in my childhood were pelmeni or vareniki.
Is there a culture that doesn’t have it’s own version of dumplings?

I bought some beautiful catfish fillets. I bought two, when really one was enough for two people. I used an egg wash, then some fine breadcrumbs, then onto the grill.
Meanwhile, I shred a head of cauliflower and then put some of the riced cauliflower into the air fryer for five minutes. With two minutes left I added a minced red pepper, then with one minute left I added diced cherry tomatoes.
Delicious dinner!
And healthy! Sounds great.
We did have Cubans last night; probably will again very soon, as I still have the fixin’s.
Tonight, crock pot chili, although the temperatures are near 90 today.
I’ve got a 5# set of dry-rubbed pork country ribs slow-roasting in the oven now. The dry rub has no sweetness and some spicy hot. Smells awesome. Next steps are launch a baked acorn squash timed to finish when the ribs are. Probably pair that with a green salad. Berries & chocolate for desert.
I made escargots, filet mignon, and green beans.
I filled up my Little Free Library with Halloween candy for potential trick-or-treaters, but managed to eat enough of it to be too full to want dinner yet. I might make a grilled cheese sandwich with some tomato soup later.
Made instant pot short ribs. Brown the ribs on both sides. Then remove, and saute onions, shallots, garlic, and carrots until they wilt. (Only I didn’t have carrots, and substituted hard apples, which worked well). Deglaze with enough red wine to stew the meat in, and then return the meat to the pot, and cook with pressure 50 minutes. Boil down the cooking liquid until all the alcohol is gone, and maybe until it’s thick. Or else add some cornstarch. Serve with a bland starch, like potatoes or bread.
Yesterday we had leftovers, but on Friday night we had pastel di carne con massa fina (beef, eggplants and pine nuts in puff pastry), mushroom barley soup, smooshed potatoes, zucchini, beets, and apple and blueberry pie for dessert. Plus a home-baked challah, of course.
BLT. I use the air fryer at 400 for about 7 minutes. Pro tip: If I overlap the bacon pieces a little they fuse into a bacon mat which sits on the sandwich better when constructing. Mmm…bacon mat.
Dinner with friends tonight, so I am Instant-Potting a pork roast for pulled pork sandwiches. Made up some deviled eggs. The others are providing the buns, cole slaw and peach cobbler. Plus beer.
We’re having smoked salmon chowder, made with Copper River sockeye.
Made a big batch of sauce last week. Will defrost some tonight and serve it with a suitable pasta.
A chicken tamale, lentil soup, and baked blueberry oatmeal squares for dessert. And the dregs of the Starburst Halloween candy.
Tonight was taco night. Tomorrow will be baked cod loins coated with cheese straw breadcrumbs, corn bread, fruit (probably blueberries) and … I haven’t figured out which side yet. Probably Tuscan beans since there’s some already made in the fridge.
