Last night I made coleslaw with hot sausage sandwiches. Sounds simple, but I wanted tomato sauce for the sandwiches and spend forever reducing the sauce and tweaking the taste.
Tonight will be leftover instant-pot short ribs, in a wine-and-mixed-veg sauce, with acorn squash, potatoes, and probably a loaf of bread-machine bread.
Top sirloin steak tonight. Mid-well for my roommate, rare for myself.
Pan cooked with onions and mushrooms, then use the fond as the foundation for a beef gravy to go with some roasted carrots and new potatoes.
Will attempt to eat outdoors at a waterfront restaurant. The area is enclosed on two sides. If it doesn’t pass my safety test, we’ll leave. But hopefully, I’m having blackened cod tacos, grilled asparagus, and white chocolate mousse cake.
BBQ, potato salad, sauerkraut and fruit tonight.
In need of comfort food tonight, so a massive baked potato stuffed with bacon, cheese, chives and sour cream.
Wild-caught salmon; baked, covered, in a 375ºF oven with kosher salt and tarragon, and a vegetable medley of cauliflower, broccoli, and carrots.
We thawed out one of those vacuum-packed pork loins (garlic and herb) and roasted it. It was okay. Baked a couple of apples and made some egg noodles with butter and thyme to go with it. Perhaps it will be better on day two.
Sorry, I know I’m late catching up to this thread, but could you elaborate? I have an air fryer that I never use, and I loves me some green beans, so I think there is a promising possibility here.
Marinated roast pork loin chops, pickled red cabbage and crunchy fried potatoes.
And apple pie with vanilla icecream for dessert.
Better get cooking…
Prepare your green beans (snip off ends). Put them in a bowl along with some sesame oil, soy sauce, rice wine vinegar, minced garlic, red pepper flakes. Toss them around. Air fry at 400 degrees for 10-12 minutes, shaking basket every 4 minutes
Last night was Pizza & Beer. My gf has been working (at home) very long days this week. Yesterday she started at 7am and stopped at 8pm, even eating lunch at her desk. Around 6 pm she asked me if i could go to our favorite place and get a Chef’s Special Pizza* and a mixed six-pack, so I did. There were only crumbs and empties left when we went to bed.
*Chef’s Special Pizza is a thing I invented. I was having trouble deciding what pizza toppings to order one night, so I asked A(the chef) to make me what he would make for himself, if he were about to head home. From then on A and I have kept the joke going. I order a Chef’s Special, and he tries to impress me. Last night’s pizza was duck prosciutto and burrata. My friend Mike tried to order a Chef’s Special one night, and A kept up the act that there was no such thing.
Oh man, I really hope it’s pizza tonight! I can tell you now there won’t be any duck on it though.
Last night I made a roasted red pepper bisque and grilled cheese sandwiches.
Stealing that idea this weekend!!
@kayaker - thanks for the green bean tip! Sounds excellent.
They’re really tasty. I’ve intentionally overcooked them and they are like potato chips.
Last night I made shrimp sautéed with peppers and onions served alongside raviolis I made from scratch, stuffed with mashed/whipped sweet potatoes.
Pan-fried chicken, yellow rice, and brussels sprouts.
Last night was pan fried paleo-“breaded” pork chops, roast sweet pots, & steamed brocolli. Simple & quick.
Tonight will be ???
I’m still holding out for pizza.
