It’s been ages, but I generally, but not always, peel it.
What kind of miserable creature would eat something called string cheese without peeling it into strings?
Might as well buy a block of mozzarella and start gnawing on it.
Ideally, peel into strings.
But most of the brands of string cheese commonly sold in supermarkets sucks. They don’t really pull into strings properly and are terribly bland. I hit the ethnic grocery store and get the braided Armenian stuff. Salty, chewy, firm enough to pull into thin threads, it’s amazing. The smoked kind is even better.

There’s a local-ish cheesemaker whose string cheese is notably better than anyone else’s, last year I met them at a farmer’s market and asked why that was.
They told me they use real milk and most other dairies used powdered milk to make string cheese.
I have no idea if that’s true, but it’s one possibility.
I had to use the special snowflake option because there was no “both” option. If I have taken some string cheese with me to work and I need a quick bite of protein food while I am working then I just bite it and eat it on the run. If I’m just sitting around and want a snack then I’ll peel it.

Definitely peel. Mozzarella* is a pretty bland cheese to begin with, and the only reason for string cheese is for the strings! I’m a fan of any food that gives me something to do while I’m eating it (string cheese, unshelled nuts, and so on). If strings ain’t your things, you can buy little individually wrapped blocks of much tastier cheese in the same section of the supermarket.
*the kind you get at the supermarket. Fresh mozz packaged in water is of course another story altogether.
Every now and then I want to walk on the wild side and I take a bite out of my string cheese rather than peel it. The texture of it peeled is simply more satisfying so I do that the vast majority of the time, but a few times I’ve just had the urge to bite right in…
I got in the habit of eating string cheese for breakfast, and I have 2 sticks every day.
I bite it. Maybe the novelty of peeling wears off after a while?
It just doesn’t taste right unless it’s peeled. In fact, it tastes decidedly unappetizing IMO. I’m weird, I guess.
I’m not made of cheese money, dude! I am not going to buy two different packets of stick cheeses to eat depending on my circumstances or mood. What if I take my “bite” stick of cheese to work and it’s slow and I have time to peel my cheese but I’m out of luck because I brought my bite cheese and not my peel cheese? You people never think these things through, it’s always this or that but never both. Well, until there are actual Cheese Stick Police I will continue my cheese eating ways. Never surrender!

It depends on how hungry I am and whether I am wrapping salami slices around it before eating.
Also want to mention that if you don’t string it, then how do you eat it? Like a white flaccid carrot?
You have to peel off the strings, that’s what makes it string cheese. Unless I’m in a hurry and then I just bite it.

i peel to give more bites of cheesy goodness. many cheeses have a better taste in smaller portions, the flavor pops out more.
incidentally it would make a good band name.
