The emergency MMP

Feeling blurf, but definitely better than I’ve felt the last few days. Swelling has gone down considerably, and apart from waking up with a headache I’m doing much better.

Off to make some lunch.

Someone go to the store for me. I hate grocery shopping.

Break time from mulch/vac/raking the back yard. We’ve spent just about the last 2 hours trying to beat those leaves into submission. Once I catch my breath and refuel the mower and the mulcher, I’ll go out and do the side yard along the road. Then I quit, since I have laundry to do.

**swampy **- yep, the sponge mop was left leaning on the front door. Real classy, eh? I’d made a list of things I wanted to talk to them about, and when I got home, they’d done the things I was going to yell about, so that’s good. I also made a note that said “rotisserie” - meaning I was going to show them how to disassemble and clean it, since they’d never done that before, and it was obvious by their after-Thanksgiving cleanup. Anyway, SIL is at work, daughter and friends are out - in my car - running around. Her battery is dead because they were using my car while I was gone. Nice, huh? I don’t recall them asking me…

Anyway, thirst has been quenched and there’s only so much sunlight left, so I better get out there. Stoopit autumn, stoopit early sunset. Stoopit leaves. At least it’s nice out - in the low 60s. That’ll end tomorrow, but for now, today’s nice…

I’ve thoroughly cleaned behind the credenza, including shampooing the carpet, and cleaned the credenza itself and am slowly re-stocking it, including making decisions on re-locating things I forget I have so that I actually use them once in a while. I’m also taking inventory while I’m there. Slow, but overdue.

I have decided to make good use of my sick leave and make chili and cornbread this week. Only problem is, Recipezaar has a gazillion recipes for chili and a bajillion more for cornbread. Halp!!! swampus (or another self-respecting Southerner out there), please give me a good recipe for cornbread and for kid-friendly chili. Kthxbye!!!

Ohh, and could somebody please explain the difference between white cornmeal and yellow cornmeal? I didn’t want to make two trips to the store, so I bought both (Aunt Jemima’s White Cornmeal and Quaker’s Yellow Cornmeal). Ta muchly!

Dotty, I’m not a southerner, but I’d guess yellow cornmeal comes from yellow corn, and white cornmeal… well, you know. I know around here, white corn is sweeter than yellow, so maybe that’s the difference. And I don’t think I’ve ever seen cornbread made with white cornmeal, but looking at the recipes here, I didn’t notice either one specified from the few I opened. I cheat - I use Jiffy corn muffin mix. :smiley:

We quit. The leaves along the side yard were soggy, so un-mowable. But the back yard looks good. My sweetie just finished showering, and I’m about to go get cleaned up myself.

Our fish are hilarious. He just went over and turned the lights on and they all came up to be fed. They’re as bad as the land critters!

Well, off to shower…

I was a bad boy and slept in instead of being deheathanated. I did go to the Canes practice, and got my jersey signed by a few of the players. I took the zoo to the DOGPARK! There was a little white terrier there. Jusding by the way he follwed her around, and was fighting off any dog(including Gordie) that came near her, I think it might have been the dog Nelly was travelling with on her migration last year.

FCM, I hope the fish don’t start barking you awake at 0600, like the rest of the critters.

I’m incredibly tired. Today I got a new (to me) pair of New Balance sneakers that fit from the never-claimed lost and found bag. One of the unexpected benefits of working all the time–now I don’t need to buy new sneakers!

Buttermilk Cornbread

1-1/2 cups cornmeal
3/4 tsp. baking soda
1 tsp. salt
1 and one-third cup buttermilk
2 eggs
1/4 cup shortening, melted

Sift cornmeal, soda and salt.

Combine buttermilk and well-beaten eggs. Add cornmeal mixture. Beat well. Add hot melted shortening and beat well. Pour into well-greased skillet. I use shortening to grease the skillet. Bake at 450 degrees for 20-30 minutes.
Sour Cream Cornbread

1-1/2 cups cornmeal

1 tsp. salt
1 and one-halfcup sour cream
2 eggs
1/4 cup shortening, melted

Sift cornmeal, soda and salt.

Combine buttermilk and well-beaten eggs. Add cornmeal mixture. Beat well. Add hot melted shortening and beat well. Pour into well-greased skillet. I use shortening to grease the skillet. Bake at 450 degrees for 20-30 minutes.

Note the subtle differences. One has buttermilk and one has sour cream! Oh and I assume you are using cornmeal and not cornmeal mix. If you’re using the mix then you don’t need to add the baking soda and salt cause it’s already there.

There’s not a real difference between yellow or white cornmeal. Yellow cornmeal tends to have a more grainy texture which is not a bad thing, but I use white cornmeal cause, well, that’s what my mama taught me to use.
