To be honest, turkey is not my favorite. Hence, I rarely, rarely, rarely make a turkey.
I am extremely nervous about my turkey for the following reasons:
*It’s not a Butterball, so I am unsure about the quality, and when it’ll be done, without being dry.
*All the different temps and ways to roast the turkey have defeated me; hence, I’ll be using a roasting bag and hoping for the best.
*I stupidly didn’t brine it, so again, I’m worried about the turkey being dry.
*I’m worried about it being dry. I hate dry turkey.
I plan on seasoning it well, both inside and out, and will lift the skin, so I can rub a butter/herb/seasoning mix on the meat. I hope that helps with the flavor. I’ll rub the outside down with olive oil and rub the seasonings over that.
My stuffing recipe is good. I made it a few years ago. It uses sausage, celery, onions, apples, dried cranberries and dried apricots, and bread (of course) along with seasonings. It was a huge hit, so I’m making it again.
Did I say how nervous I am about the turkey? Really, I am. I’m usually a fairly confident cook and don’t let things bother me, other than hoping those eating my food like it. So far, that hasn’t been a problem. However, turkey is just not my thing.
I made a turkey for T-day a few years ago, and it turned out well, but, it was a Butterball, so it was pretty much no muss, no fuss. Stuff the bird, cram it in the oven, tent it, baste it, remove tent, pull out when the the little temp thing pops out. It turned out great; moist, etc.
