Never happen. Hulk has been fighting Wolverine since Wolverine was invented, and he hasn’t lost so much as a pinky. Lightsabers and adamantium claws both have “cuts anything” properties. Hulk’s been slashed, stabbed, and even had his eyes clawed out by “girl wolverine” but they grow back between blows. His tissue density is such that it resists puncture on its own. And it grows back the entire time. Picture three Jedi on Hulk with lightsabers suck up to the hilt. There’d be a blast furnace raging inside of him, but his admittedly insane healing factor would keep pace with it, and he’s now getting angrier. They’re never going to lop off Hulk’s limb like some Tatooine barfly, but even if they did, this is The Incredible Hulk! He would mark time beating them to a pulp while his hand grew back.
Well, that’s the question…is the Hulk invulnerable to a light saber. If you assume so, then basically the Hulk has skin like the battle steel on a star ship, since I seem to recall a Jedi sticking a light saber through one in one of the movies. That means the Hulk is basically a god, so in that case the Avengers win. I suppose it all comes down to what assumptions you make about their abilities and capabilities.
FTR, here’s a list of materials in the Star Wars universe that have some degree of resistance to lightsabers. I suspect that vibranium (the material that Cap’s shield is made out of) would be on that list, if it existed in the Star Wars universe. Not sure where “hulk skin” would fit, but it establishes that there are things in the universe that can’t be easily cut by a lightsaber.
I think the best Marvel Universe comparison with your average Jedi is Spider-Man. Spidey lacks the mind tricks, but as mentioned they’re irrelevant anyway. What he DOES have is limited precognitive fighting ability (Spidey Sense) and the ability to manipulate objects from a distance. I’ll grant that Spidey’s ability is more limited, since he needs to have a clear shot to it, and has to aim it, but even so, I think the question of whether a Jedi could beat an Avenger is very, very similar a question as to whether Spidey could beat an average Avenger.
As such, I think the Jedi are screwed. I think they best they could hope is to take down the normals and disassemble Iron Man’s armor, but past that? No chance. The best they could do is play Keep-a-Way and hope the Avengers tire of fighting them.

It’s a pretty short list.
The first one somehow causes the lightsaber to short out…I’m guessing that’s not a factor in Hulk skin. If that material was readily available then everyone would be wearing it, since it’s also resistant to blaster fire (which means the Imperial troops don’t have it, since they go down like ten pins in the movies).
I’ll buy that Cap’s shield is one of those materials on the list, but I’m not sure how that would help him that much, since a guy with a shield against a guy with a sword is pretty much always going to lose in the end, even if Cap has similar reflexes to a Jedi master. And his suit isn’t made of the same material, IIRC. Unless his skin is also made out of one of the rare lightsaber resistant materials on the list of course…
You can do that sort of thing in some of the video games…so pretty far I guess

Unless we are saying that all the Avengers (or even some of them…I’ll buy Thor, but the rest??) are invulnerable to lightsabers and lighting, I’m not seeing the comparison. Spidey, IIRC, only has those quick reflexes, really hard fists and those web thingies as weapons, so it would be a brawl. Jedi have, let’s say, the same reflexes, lightsabers or light staffs, and lighting out of their hands, as well as their fists, so seems like they would be ahead of Spiderman, except for the getting away part, which I’ll grant Spiderman could do on his web trapeze.
ETA: And I’ll grant, Iron Man could also get away, maybe fly about providing air support (for all the good it would do against Jedi swatting stuff out of the air), and could simply fly away instead of having to stand and die. He’d only have a problem if he was stupid and decided to go toe to toe with a Jedi…unless, again, his suit is made out of one of the few materials that are invulnerable or resistant to lightsabers.
Captain America’s shield is absolute: Even a direct hit from a nuke can’t damage it. Lightsabres are pretty dang penetrative, but they’re not absolute: Force fields (including the blades of other lightsabres) stop them completely, and even fairly ordinary materials can put up a fair amount of resistance to them. Remember, even though Qui-Gonn and Obi-Wan were able to cut through that blast door, it was really, really slow. So I think it’s pretty clear that lightsabres would be stopped by Cap’s shield.
The Hulk’s flesh isn’t completely invulnerable, but it’s extremely tough. It’s probably reasonable to assume it’s about as tough as that blast door, which means that 'sabres could cut through it, but slowly. Then, the problem becomes that Hulk, especially a Hulk whose anger is being fueled by the pain of vivisection, can heal faster than the blades can cut.
Most of Iron Man’s armors aren’t quite that tough, but they’re probably still enough that he wouldn’t lose a limb with one easy swing. His armor would be badly damaged, but he only needs to be able to survive long enough to take to the sky.
Can Captain America survive a nuke from behind the shield? If so, then, again, we are talking god like powers, so yeah…they would win easily.

Then yes, Hulk wins. If he’s got super tough skin and can heal that fast, nothing could kill him (I assume he’s invulnerable to lighting too) before he could kill it.
Again, if his suit is proof against lightsabers, or even that resistant, then it’s over, especially if it’s equally resistant to lighting as well. In fact, he’d never have to even bother closing in, just let the Hulk smash them all while they futilely swing their ineffective lightsabers at him while he heals any minor wounds they give him and shrug off the lighting. Game over.

My, perhaps flawed understandings of the dubious physics of lightsabers is that they are basically plasma weapons. So, shields and other lightsabers deflect them because the magnetic field that keeps the plasma in the shape of a blade (or shield or whatever) would repel another magnetic field in a (plasma) shield or another lightsaber. Same goes for some of the doors and such in the movies. That’s different than the list of resistant materials though, which somehow ablate or otherwise act in a similar way. I assume there is a similar tenuous explanation for why blaster bolts are similarly deflected (i.e. they aren’t laser beams, but somehow encapsulated bolts of plasma fired at near light speed, or something like that).
I learned from Episodes I-III that Jedi are extremely easy to fool. Jedi are so blinded by their own arrogance that even the most hackneyed, baldly obvious plot to destroy them will be ignored or overlooked until it’s far too late. Advantage: Avengers.
Give the Avengers Jedi-level technology, and I think it wouldn’t even be a fair contest.

Lots of discussion here about if Cap’s shield can withstand a lightsaber. But… Is there some reason I’m missing that it wouldn’t be yanked away from him before he even closed on his telekinetic Jedi opponent? Even if his grip is unbreakable, just levitate the shield 15 feet in the air. If he lets go, you have his shield. If not, he’s not doing much damage dangling up there.
On a different note, this conversation has made me realize I owe a friend an apology. I’ve always been a “Marvel” and have made fun of him for being a “DC.” because DC’s (least stupid) characters are basically immortal , undefeatable gods, and where’s the fun in that? But all this “nope, he’d heal instantly. Nope, he’s immune to that. Nope he beat X superhero who has that power” makes me realize that most of the superhero world really is no better.
It’s probably a little pointless to have a conversation about “Thor vs X” or “Hulk vs X” when who or what X is does not change the outcome in any way, shape, or form. 
Yeah, it’s not much of a discussion. Sort of like arguing with theists…well, god can just wave his magic god wand to get around this or that point. 
That’s what you get when you send lightweights like Jedi up against Earth’s Mightiest Superheroes!
Only the Sith and Yoda have demonstrated that level of force capabilities in battle. Movie Jedi don’t pull or push items like Vader did when toying with Luke. Sith vs Avengers is actually the better match now that I think of it. The Emperor, Maul, Tyranus, Vader, and toss in Grievous to be sporting.
The Hulk can certainly be defeated, by a wide variety of opponents. It just takes different methods than a frontal assault. Anyone who can calm him down can deal with him, and there are also ways of neutralizing him while in Hulk form (launch him into orbit somehow, say). You probably won’t kill him, but you only have to outsmart him.
Which means the Avengers win again, because the Jedi are anything but smart.
