The Labo(u)r Day MMP

Evening all. As expected, all the soccer yesterday pretty much drove my reserves down to nothing so after buying a new pair of athletic shoes, getting the car washed and eating at Olive Garden (drank 3 glasses of tea and 2 of water), the afternoon was nappage and tackleball watching. Still tired even with nappage and an early bedtime is predicted.

Sari, glad the fence is done, but Echo won’t be seeing her friend as much… And a bathroom remodel can be mucho bucks, be sure you know what you want to do before you commit to it.

Butters, hope you can get something worked out on the stair lift and daughter might have been surprised by ‘dad’s’ grumpiness, but she sounds like a pretty cool person and can adjust. Glad she took some of the load off you.

One of you guys mentioned a couple in Florida that captures and sells aquarium fishes. Do they have a web site?

A week and a half ago, a cow-orker brought in Very Large Zucchinis (VLZs) from his garden. I brought one home. It was about 13" long, and over 3" in diameter at its widest point. I wasn’t sure what to do with it. When I’ve mentioned zucchini lasagna, Mrs. L.A. nixed the idea. ‘If I want lasagna, I want real lasagna!’ So tonight I decided to make zucchini casserole.

Slice the VLZ on a mandolin slicer. Salt, and leave to drain. Brown some ground beef. About halfway through, add sliced mushrooms, minced garlic, oregano, and a bit of salt. Drain off the fat, and add spaghetti sauce and simmer. Mix ricotta cheese, egg, parmesan cheese, and some nutmeg. Put the VLZ slices in a layer on the bottom of a 13" x 9" baking dish. Add some sauce, and then add a layer of the cheese mixture. Put on another layer of zucchini slices, sause, and cheese mixture. Put on another layer of zucchini slices and sauce. Cover, and bake in a 325ºF oven for about 45 minutes. Increase the oven to 375ºF. Add shredded mozzarella to the top of the ‘casserole’, and return to the oven, uncovered, until the cheese is melted and browning.

my aunt usually grows those big abominations of nature… but a lot of people say if they get too big they get bitter … did you run into that ?

I didn’t detect any bitterness. It may have been the Prego, but my first impression from my first bite was, ‘Hm. Tastes sweet.’

Maybe Alotta People is bitter.
