Highlight whatever you want to quote in the first post you want to reply to; click on the quote box that appears above it. It’ll show up in the reply box.
Move to the next post you want to quote and repeat. Repeat for as many posts as you want.
You can finish your replies as you go, or move back and forth in the reply box to work on them.

If you type a few characters after the first quote, you can collapse the editing window, but keep the quotes, so you can still read the thread without the editing window covering half the screen.
Make sure you put a space between each quote. If you just try to line 'em up, it won’t work.
Another trick I forget is that if you highlight part of a person’s post and then reply to that post, it automatically includes the highlighted part as a quote.
That only works to quote one person, but sometimes on my mobile device the “quote” button doesn’t appear or won’t work when it does. The “highlight and reply” trick always works though.
If you wish, you can just shrink the size of the editing window. Right in the middle of the blue (purple? gray? Damned colorblindness!) bar across the top of the window is something that looks like a longish equals sign. Click and hold to drag it down to the desired size of the window.
I find that if it’s hard to do using the app, try it in a browser on a computer. And if it’s hard to do on a browser, try using the app …
And everything is easier on a real screen and keyboard versus fighting the tiny screen and non-keyboard on a phone or tablet.
I find the multi-quote feature super easy & intuitive to use. Highlight the bit I want to quote, click the ["Quote] pop-up. Move to the next bit I want to quote, highlight that, click the ["Quote] pop-up. Lather rinse repeat for however many hunks of however many different posts I want to capture.
Then go into the edit box and add my words of wisdom in between each of them. I can’t really think of a way to make it any easier.
Yeah, but on the settings I use, that still covers too much of the screen. My way collapses it down to just the bar at the bottom.

While you’re preaching that, let’s talk about how damned near every dedicated app turns out to be a stripped-down version of the website where you can’t zoom and half the features are missing.

I find that using the html br-tag very useful when separating multiple quotes.
