To answer the question, odds are good that the plane lands but no one is allowed to disembark. Then, come The Date and The Hour, Trump is no longer President and Scottish options are more open.

The thing is, the UK is an autonomous nation whether Trump likes it or not. They have every right to keep him out, even if he was still president, though it would create a diplomatic kerfuffle. And if he was no longer president it would be a complete non-issue to bar his fat ass from entry for frivolous reasons during a pandemic lockdown.
It’s the sort of situation that’s very rare because there have been very few lunatics like the orange shit-gibbon in a position to force such issues. But one famous example I could point out is that many years ago, when Khrushchev visited the US and was in LA, he asked to visit Disneyland. The authorities said “no”. Khrushchev went into a rage, but there was nothing he could do about it:

Are you under the impression that sovereign nations do not have the right to determine who can enter their country, and the means to enforce it? Of course an aircraft that presented no physical threat would not be shot down, but if it landed without ATC clearance, and nobody on board had proper authorization to enter the country, everyone on board would be arrested and either prosecuted or deported. But of course this would never happen, because the crew know this, and they would not leave the U.S. without authorization to enter the U.K.
Also - what the US president might be able to get away with - just showing up and asking to land without getting formal permission first - is different than what a private citizen at 12:01 pm on January 20 can get get away with. Even if Trump goes to Scotland (or anywhere else) before Biden is inaugurated the moment Biden formally becomes PotUS Trump might find himself just another illegal immigrant.
Even if he tries to enter the U.K. on Jan 19th, it’s transparently clear that he’s not going in his capacity as head of state. There’s no reason, even on the 19th, that the U.K. would feel any kind of diplomatic obligation to let him enter.
Eh, I say let him in, let him go.
Then at 12:01, he can be arrested as an illegal immigrant, and stay in the UK’s detention facilities for a few years, until they find a country that’s willing to take him.
I’m not so sanguine on the flying onto Russia scenario unannounced, either. The pilots might like their jobs, but I don’t think they’d be so keen on attempting something like crossing international air borders without filing flight plans.
