Waffle fries go with anything french fries go with. Around my house they are the “chips” in “fish & chips.”

I like the way you think. Sometimes I’ll take it a step further and mix ketchup, mustard, and a LOT of black pepper; slightly stirred (so the red and yellow maintain their color, instead of turning into an orange slurry).
Personally, my favorite condiment for fries is tartar sauce.
Cheese. They’re kind of made for this, I think. Otherwise, I’m not much a cheese fries guy. With Merkdt’s cheddar spread, especially.
Sriracha sauce.
Why do I always think there should be a “D” in there? It’s Merkt’s, preferably their sharp cheddar. Feel free to dress up and get into “garbage fry” territory if you wish. (Back when I used to order these regularly, I’d sometimes get them with pickled jalapenos, but you can use your imagination and top it with chili, bacon, sour cream, green onions, etc., if you so choose. I like to keep it relatively simple.)

Oh, what entree to pair waffle fries with? Well, any entree regular fries would go good with. I mean, I guess if you want to be clever, you can pair it with “scoopable” entrees like chili, so you can use your waffle fry as a scoop but, otherwise, it’d just be the usual stuff: hot dogs, hamburgers, chicken sandwiches, etc.
Roast beef, and make boo fries. (Top your waffle fries with shredded cheddar, then pour beef gravy over that to melt it. Optionally add a little prepared horseradish for some extra zing.)
Alternatively, barbecue beef, and dip the waffle fries in the sauce. The main advantage of waffle fries is holding sauces and toppings well, so you might as well exploit it.
I would make some form of chicken tenders. Then, you’d be eating Chick-fil-A without having to make the trip through the drive-through!
Steak. Then serve some good Dijon mustard on the side, and dip both the steak and the fries in it as you eat.

The proper name of the particular cut of a potato is gaufrette… and however you enjoy it is up to you…
