Currently cooking a basically lasagna-less lasagna. Got the bottom layer in, and kinda forgot to add more…so it’s just meat, cheese, meat, cheese…I’ma callin’ it lasagna pie. >.<
I am just about to make red velvet cupcakes for the very first time. I am quite nervous. I have had them twice, once in New Orleans and once from the Hummingbird Bakery in London. The bar is high. I have read lots of recipes and reviews and tonight is the night.

I am flat broke. And ill. But for The Big 4th of July Celebration, I roused myself to make something sweet, as I had all the ingredients just sitting there.

Slice Little Debbie Strawberry Shortcake bars and put in a dish, as a base. (Twinkies would work as well.)

Beat a package of cream cheese till smooth and fluffy. Add a blob of Cool Whip, beat again, and fold in more Cool Whip till light and fluffy. Spoon this over the cake.

Fling on handfuls of berries: I used blueberries and cut up a few leftover strawberries to make them a similar size. (also I picked some raspberries turning ripe out in the yard and added them.)

Refrigerate and serve with the rest of the Cool Whip. A low-rent, yet tasty dessert, and I didn’t have to bake shortcakes or whip real cream in my weakened condition.
Peruvian blue tilapa, basted with olive oil and muchI curry, broiled 9 mins on each side. Drizzled with sriracha sauce. No carbs tonight, except for a boulevard brewery tank 7 farm house ale.
Broiled zucchini squash with lemon pepper on the side.
Burgers, and corn on the cob.
Burgers seasoned with salt, and cooked on the charcoal grill. Corn coated with olive oil, wrapped in foil, and cooked on the barbie. Roomie made guacamole, and we had that on our burgers. Toasted buns, lettuce, tomato, onion, mayo. This was the first time I’ve cooked corn on the grill. (Other times, other people cooked it.) It’s the best CotC I remember. Got it from Trader Joe’s.
Just fried up some homemade corn dogs, inspired by the fair food thread.
Baby back ribs, beans and mac&cheese.
We had beer can chicken, German potato salad, cucumber salad and store bought chocolate cake with cherries for a 4th of July dinner tonight. Delicious.
I love pineapple too! I always thought I didn’t like it when I was younger because I had only had it canned, but fresh pineapple is a whole ‘nother thing. ![]()
Chicken pineapple tacos are one of the most popular dinners at our house, and they’re so easy, just chunks of chicken and pineapple cooked together with taco seasoning, and add fixin’s. (Guac, sour cream, lettuce, tomato, salsa, etc.)
Night before last we did a pork tenderloin and changed up our usual mango chutney to be a pineapple chutney…superb!
Glad you liked it. It’s nearly addictive around here! We’re having it tonight along with burgers (beef or lamb - depends on what looks good at the store). And corn on the cob. I used to be so “meh” about corn, till I read about grilling it in the husk. Totally different story.
I don’t know how we get stuck going out to eat on major holidays but we are pretty dumb for continuing to do so! We grilled Friday and Saturday and Sunday, then thought “Hey, let’s go out on Monday!” :smack::smack: The net result is a bad approximation of food, even at a well established joint we normally go to every 4-6 weeks.
Chicken on the grill in soy sauce and lime juice and garlic. Probably some pepper and onion skewers and some whole wheat couscous. I forgot to buy corn - whoops!
Going to a friend’s house tonight to watch some Netflix and have snacks, so they’ll probably make oven-fried potatoes and I’ll be making that delicious hand-cut salsa - seeded stem tomatoes, vidalias, jalapenos, cilantro, salt and lime juice.
I was mourning the loss of a local/organic grocery store a few weeks ago and tried out another version near future MIL’s house where we’re housesitting. It was fantastic and I’m excited to try some local pastured milk in glass bottles that I picked up.
I got an enormous Napa cabbage from my CSA this week, so I’m making a Hoisin Pork with Napa Cabbage Stir Fry. We got some dill and my husband’s requested dill bread so I’ll be dragging out the bread machine as well. I don’t think they go together though.
Stuffed bell peppers today, and we just picked up the ingredients for an ancho aioli for tomorrow’s pork chops.
Today’s lunch was grilled sirloin with basil chimichurri and roasted cauliflower. Why have I been wasting my time eating strip and rib-eye steaks? Granted it was a pricey steak from Whole Foods and I spent the time to do it the right way, but it was truly fantastic and a family pleaser. The chimichurri was not really needed, but I liked a measured dip into the garlicky goodness.
Gonna make some pit beef again today. Somebody’s post here on grilled okra got me thinking, too, so I’ll have a couple skewers of that on the grill, along with some corn.
Lasagna, round three. First round was last week, and the process involved me boiling the lasagna sheets and then conveniently forgetting to put them, you know, IN the lasagna. :smack: Round two consisted of my adding a bunch of ziti and rebaking, which was a great success; too bad I did it all so late at night I had it cooling on the stove until…until I was so tired I went to sleep without putting it away. :smack::smack::smack::smack:

Lunch was small globe artichokes from Trader Joe’s.
It will be a Trader Joe’s dinner: What’s left of the frozen meatballs simmered in TJ’s BBQ sauce, mixed squash with sliced red pepper added and ‘roasted’ with TJ’s olive oil in a cast-iron skillet, and a couple ears of leftover roasted TJ’s corn on the cob.
Did you toss it? I would’ve kept it and eaten it without a second thought. Depends on your risk tolerance, I suppose, but something like that would not have given me pause, especially if I were reheating it.
I mean, hell, how many of us leave pizza out overnight, don’t refrigerate, and eat it in the morning?
Tonight I grilled shrimp (olive oil, garlic and fresh lime juice); grilled sweet corn on the cob; and grilled peaches with a Grand Marnier glaze for dessert.
Having a not so healthy dinner. Bowl of lipton chicken noodle soup, chicken cold cut sandwich and a bowl of cheezies.
