What can I do with leftover deviled egg guts?

We made deviled eggs today, and ended up with too much of the stuffing (More than half of the eggs were double-yoked. It was weird) . It’s way too tasty to just throw away, but we’re not really sure what to do with it. There’s somewhere between 1-2 cups left. The recipe we used is pretty basic, except we used garlic vinegar instead of regular, and we added a bunch of curry to it. Any ideas?

Deviled egg guts is almost the same as egg salad (just, er, without the chopped up whites of course). It should work in a sandwich or on toast, or even just on its own.

Precisely. Whip with mayonnaise and condiments to taste to make egg salad suitable for sandwiches.

Personally, I’d probably just eat it out of the bowl with a spoon. After closing the blinds so the neighbors couldn’t see, of course.

Mmmm… deviled egg guts…

Bet it would make a great Potato Salad (or Macaroni salad). Boil some potatoes, add some chopped onion and celery, Mayo, and the remaining deviled yolks.

hmmm, make baked potatoes, scoop out the innards like normal for twice baked potatoes, and mix in some of the egg guts, and some really good cheese [a nice sharp cheddar would go nicely with the mustard and cayenne in a good batch of deviled eggs] and pipe back into the potato skins, and finish like normal for twice bakeds. The eggy insides would make the potato glop much richer. Garnish with a good sharp or half sharp paprika.

Pipe it onto melba toast rounds and garnish with little dollops of caviare or a tiny salad shrimp cooked with a nice old bay seasoning or zatarans crab/shrimp boil.

Halve and remove the seed from avocados, and pipe into the center of the avocado, garnish with tiny dice of a good tomato like a nice deseeded roma, or half a grape/cherry tomato.

Scoop the gooey insides out of a tomato/remove the seeds from a green red or yellow bell pepper and bake/broil/grill [or do it with raw] and pipe into the resulting bowl of veggitude, garnish with some fine diced prosciutto.

other than that, I got nothin

I’ve stuffed steamed pea pods with egg salad before-- no reason why they wouldn’t be even tastier with deviled egg guts.
