I had two leftover homemade chicken enchiladas (and I’m still hungry).

Dinner this evening is still nine or so hours away. Last night I had a chicken salad sandwich.
Leftovers from Jamie Oliver’s 30-minute piri piri chicken dinner, which is excellent btw. I’m so proud of myself, I made caramel!
We’re planning to grill bacon-wrapped chicken tenders tonight, and have the pork chops tomorrow night since it’s supposed to rain tomorrow and thus, won’t be nice grilling weather. No word yet on the details of the pork chop plans, but they’ll most likely be simply seasoned and seared with some sliced onions.
Some vegetables may or may not get involved.
BBQ chips and candy corn.
Garlic rubbed ribeyes, mashed Yukon Gold potatoes (also with garlic), broccoli, Barefoot Shiraz. Yum.
Carnitas street tacos with red cabbage, salsa verde, and guacamole. Washed 'em down with some sparkling wine.
An omelet with avocados, cheddar, and pepper jack cheese inside and salsa on top – side of 12-grain toast, buttered.
I’m a competent rather than great cook – but I do make a damned good omelet.
I made chow mein stir fry with bok choi, red peppers, asparagus, snap peas, red cabbage, baby portobello mushrooms, broccoli, carrots, and seitan.
I made veal parmesan last night, with whole-wheat spaghetti.
Big salad–Lettuce, cherry tomatoes, string cheese, olives, croutons. Diet Pepsi.
Bean, cheese and onion enchiladas - delicious.
Niku-jaga - beef slices, onions, carrots, potatoes and shirataki noodles in a sweet soy sauce soup, done in the slow cooker. Yum.
I’m making barbeque pork sandwiches with baked beans and coleslaw for the family tonight, but I don’t like any of that stuff much, so I’ll be eating leftover shepherd’s pie.
Pulling together an emergency comfort dinner for my husband, who’s had a long day–chicken and noodles, creamed spinach, and blackberry pie.
A couple of hot pockets.
Tried a few new things that turned out awesome.
Sausage on a bun with grilled green peppers and onions, broiled eggplant with Parmesan cheese and garlic, boiled red potatoes and ice water to drink.
Here’s what made it so good: I roasted a long red pepper over an open flame, then added that to the sausage sandwich. It couldn’t have tasted better.

Well last night, when the thread started, we had Jamie Oliver’s “creamy butternut squash” with green beans and a baguette on the side. That was delicious but insanely rich.
Tonight we had Mollie Katzen’s “soup in a pumpkin tureen”, and the rest of the baguette. The tureen was, in fact, a pumpkin. The two of us and our guest all agreed the soup was mediocre, at best. The broth was pretty good and the pumpkin was good, but it didn’t meld well. However, I didn’t know if I liked rye bread going in to soup prep. The answer is that I don’t.
Peanut butter sammiches. Comfort food 'cause I had a bad day.
Beef carbonnade (Flemish beef & beer stew.) Wowza!
