What's For Dinner? (spring '19 edition)

That looks great! And I have some lemons and cream in the fridge I need to use, along with some chicken broth I made a couple days ago …

Grabbed some nice looking artichokes at the store after work. I haven’t gotten any lately, for some reason, even though I love them. Too late to cook them tonight, but looking forward to tomorrow. :).

The perfect summer meal-grilled hamburger with just salt and pepper, corn on the cob with lots of butter, some watermelon, and a Squirt.

Sunday night? A 14-ounce top sirloin steak (a little overdone - I had it in the broiler for 14 minutes, but it was too red on the inside, so I put it back in for 8 more minutes, and it ended up about 1/2 pink and 1/2 gray), and some roasted green beans.

Monday night? “Pizza” - in quotes because it uses a cauliflower crust, on top of which I put a spinach crust (2 cups spinach, 1/2 cup shredded mozzarella, and an egg, put into my food processor and then pretty much “poured” over the cauliflower crust), and then tomato sauce, “cheddarella” cheese, pepperoni, and sausage.

Last night we made some kinda wrap with smoked salmon, avocado, cucumber, horseradish, capers, arugula, and cream cheese. Really turned out good.
Tonight, reubens and baked beans. I just have to have some sauerkraut now and then to be happy. :slight_smile:

Both of us are rather the worse for wear with various minor maladies/allergies/injuries, so tonight is Stouffer’s lasagna and a green salad. Minimal prep involved for a satisfying meal.

I have a potage simmering on the stove. Almost done, and then fresh Scotch baps with butter as an accompaniment, and we’re good.

It’s the sort of meal that goes with a light snowfall.

Piffle. The baps weren’t fresh. Hint of mould.

I’ll drown my sorrows in another glass of Oyster Bay Sauvignon.

Gyro, Greek salad, French fries.

Tonight will be scallops Florentine, snap peas and maybe some garlic knots.

Thanks to Dinsdale’s bean thread, I got a hankering for some chili. It’s working in the slow cooker right now.

We had scrapple and eggs tonight. The scrapple came from a neighbor’s last butchering and was delicious! Washed down with hot coffee. Nothing better than breakfast for supper!

Oh yeah. I like scrapple, but I only get it once in a blue moon and then forget it exists until the next chance encounter.

We don’t have it often. It’s a great treat!
Tonight we are having Fried chicken and homemade fresh cut fries!

Tuna salad on whole wheat, Swiss cheese slices, pineapple chunks, sugar cookies.

I don’t know. My oven igniter decided to crap out. So gotta do something stove top.

Mandarin chicken, rice, green salad.

Tonight was improvised pseudo-Moroccan chickpea and vegetable stew over basmati rice. We needed something vegan that we could throw in the crockpot for dinner guests. Chickpeas, onions, garlic, tomato paste, ras el hanout, ginger, paprika, turmeric, white pepper, and preserved lemons all day on low. When Tom Scud got home, he diced a giant butternut squash and a head of cauliflower, tossed them with olive oil, and roasted them and threw them in with the chickpeas. Pretty tasty for something completely invented.

Fried chicken, garlic biscuits, cherry tomatoes and blue cheese dressing, and a lemon bar for dessert.

Tonight, it’s Chicken Tortilla Casserole - in a round casserole dish, start with some Alfredo sauce on the bottom, then a “low net carb” (i.e. high-fiber) tortilla just big enough to fit it, then a layer of shredded chicken, sauce, spinach, mozzarella, another tortilla, another layer of chicken / sauce / spinach / mozzarella, and so on, finishing up with the remaining sauce and mozzarella on top. Heats up well for leftovers.
