What's for dinner tonight?

Grilled cheese and store-bought potato salad. Not super healthy, but yummy and we are both* very, very lazy tonight!

*who am I kidding? He does all the cooking!

I have rehearsal tonight, so I’ll just grab a sandwich and an apple or something.

Hooo-boy, the last couple of weeks have been draining for me! And we ended up making an impromptu trip to Baltimore (5 hour drive) this past weekend, which obliterated my eating out/ordering in budget.

So tonight, I needed something super-simple.

Fortunately, I had everything I needed to make my “easy” spaghetti. That consists of browning some ground beef, draining it. Adding some pasta sauce from a jar, kicking it up with some of my own seasonings, and putting it over easy-to-boil Angel Hair pasta. Served with bag salad and garlic Texas toast from the freezer!

Last night I concocted a casserole with some chopped green cabbage, ground beef, onions, garlic, and spaghetti sauce, baked it low and slow in the oven, and served it over rice. It was good. Tonight we are entering… the leftover zone.

Pork shoulder roast. Petite red potatoes and green beans almondine.

I cook for one, but make big meals that I can enjoy for more than one day!

Plus that means I don’t have to “cook” tonight. Going from thinking about it to eating it in about 10 minutes is a good thing!

I was kind of lazy today, too - Kraft Sharp Cheddar macaroni and cheese with added mozza, sour cream, cottage cheese, broccoli, peas, and chicken chunks. It was actually really good.

Hm, and I made the above ingredients plus carrots, bell peppers, celery and chicken broth into a soup. Added some white rice and a good healthy splash of Chiptle Tabasco. Looks kind of like barf but tastes great.

And it was good. Substituted water chestnuts for mushrooms to appease Mrs. Plant who does not like them, some green curry paste and red bell pepper for serious peppers which I did not tell Mrs. Plant about, who finds green bell peppers too hot. :slight_smile:

I didn’t have enough mint, and need to manage the crispness of the onions, scallions and peppers. I used shallots instead of onions, always a good move. You know, like subtle.

I almost did the thai soup <have a can of coconut milk left over from last month’s attempt to recreate the soup> but sweetie brought fish tacos home. While good, the fish in there is just barely there, so I had to thaw out four flounder filets and fry the hell out of them. YUM!

I made pizza. Light sauce, four cheeses, red onions, black olives and two kinds of mushrooms. Good, good stuff.

Chicken tenders with lemon, orzo and asiago. Broccoli.

We tried a new recipe that my wife found in a magazine - beer-battered fish and chips! Other than the fact that we didn’t have any malt vinegar or tartar sauce, it was pretty tasty.

Last night was frozen pizza, because I didn’t get home until almost eight.

Tonight is probably bacon-leek pasta with a white wine sauce. Which sounds a hell of a lot harder and fancier than it actually is.

We have leftovers to finish–Spicy Crab Cakes with Jade Sauce (the jade color is from cilantro) with buttered parsnips and spinach with nutmeg. Today I made Golden Chicken Corn and Orzo Soup from the Fine Cooking website, but that’s for lunch. One of these days I’ll figure out how to make crab cakes that stay in cake form instead of falling apart.

Beef with broccoli and my favorite fried rice from Grand Sichuan, at my parents’ place tonight. And Duncan Hines brownies for dessert! (We may not love to cook in my family but the eating is dem fine.)

I had Wiener Schnitzel with pommes frites and some veggies on the side (spinach, carrots and turnips). Coupled up with a couple of Pils. Sometimes in Germany you just have to go full out German (okay, Austrian).

Healthier version of a meat pie, and probably spinach or a salad. Perfect for lunch tomorrow.

Eggs scrambled with Home fries (heavy on the fried onions, a dash of garlic pepper) and cream cheese with chives. It was awesome.

Either taquitos & salsa, or grilled salmon burgers with roasted red pepper-garlic mayo. Or both. Has to be quick because both kids have basketball tonight.
