What's for dinner tonight?

Fancy dinner tonight: hot dogs and mac & cheese.

Last night’s dinner: Corn Flakes chicken. (The recipe off the back of the cereal box: basically, make a batter of 1 egg + 1 cup flour + 1 cup milk, dredge chicken in whisked batter, coat chicken in crushed Corn Flakes, drizzle w/ melted butter, bake at 350 till done. Teh Yum.) Served with saffron rice outta the rice cooker I bought Mr. Horseshoe for Christmas.
Technically, a gift “for us to enjoy together” which usually means lingerie but b/c it’s the Shoe household it means kitchenstuff. :slight_smile:

So now, I gotta say:

Ceejaytee: I make fishcakes out of leftover fish, and I always use mashed potatoes as a binder. Do you? If not, try it - works great, holds shape well.

This is almost exactly what me and the GF made last night…chicken instead of turkey, seasoned with turmeric and cayenne and cilantro and carrots instead of onions, collards and kale. Such an amazing dinner…we’ve done it twice in the past month :slight_smile:

Kraft Macaroni and Cheese (Deluxe - Original) and boiled Ball Park hot dogs.

Tonight - avo-cheeseburgers from home-ground chuck and oven fries (cheddar cheese powder, cayenne, salt and pepper). And baby carrots for token veg.

Tomorrow the crock pot comes out: shredded beef tacos with a tangy pickled jalapeno/onion/picante reduction.

Run of the mill salad bar salad, then I added capers, cubed spuds and albacore tuna for a tasty salad nicoise!

Artichoke-pesto tilapia w/garlic spinach, mushrooms and peppers. All washed down with Lagunitas IPA.

Winner!

I use the soup as an means to sneak copious amounts of greens into the family’s food without them realizing it.

Tonight’s dinner: supermarket fried chicken. It was surprisingly good and on sale to boot. Tomorrow’s dinner will be more exciting.

We used the rotisserie to cook a whole chicken.

I decided I’d rather not find space in the fridge for 6 sad looking mushrooms, 3 eggs, and about half a cup of milk in a gallon jug, since a new box of mushrooms, dozen eggs, and gallon of milk had just been bought and needed the space a lot more.

So I made a mushroom, onion, and cheddar three egg souffle from scratch, without a recipe, and I ate it all by myself.

(I think of souffle as a lazy-night dinner. How weird is that?)

Chicken breast stuffed with three cheeses and jalapeño pepper, and wrapped in bacon. Low carb heaven, baby!

Tonight I am cooking rack of veal for the first time. This could be fun.

Hey Walloon- want to share that recipe? It sounds great.

I bought the stuffed chicken breast at the butcher’s. But it contains aged Parmesan, Monterey Jack, and Cheddar cheeses, with chopped jalapeño peppers and fire roasted red bell peppers (available bottled). The stuffed breast is wrapped with two strips of bacon in an “X” and topped with herb butter glaze. Bake in oven at 350°F for 35–40 minutes.

Chicken parmesan over spaghetti, with a mixed greens salad, a glass of ice water and a glass of merlot (Yellow Tail '08).

Shrimp stir fry and fried rice.

We keep Kosher, and I hate you. :slight_smile:

Tough times on my college budget sadly :frowning:

A hamburger patty (yes, by itself), some sliced onions, and a side of Ore Ida French fries. I also had a few ketchup packets. I’ve pretty much exhausted all of my food supplies in the fridge and freezer, and the ground beef I used wasn’t even mine.
