Looks like dinner tonight will be Cajun salmon, mac’n’cheese, and… asparagus? Broccoli?
I’ve mixed up a rub and toasted it and put it in a jar. Now all I have to do is go to the store for the other stuff. Good wild-caught salmon at the local market. (It must be wild-caught! Unless you have no alternative.)
The fish didn’t come out as well as last time - lack of ingredients measuring for the pesto, I think. Still tasty, just not a stand out.
Last night on my own (the mister gets home late tonight), and I’m fresh out of motivation. So, grilled sausage: chicken with roasted garlic/gruyere. I might have a vegetable and a pickle on the side. I think we have a red pepper, but the fridge is somewhat bare at this point!
Can’t remember the last time I had souvlaki. Sometime within the past year or so, I think. But it wasn’t spectacular enough to remember.
The veg tonight was asparagus. Roomie likes it better than broccoli. Now I have a Sara Lee cherry pie in the oven. And there’s créme brûlée and vanilla ice creams in the freezer. I told the woman at the market, ‘Wait a minute… I slaved over a hot stove, did the dishes, and now I’m out getting dessert! How did that happen?’ SHe said it sounded all right to her. ‘Where can I get one of you?’
I cooked up a pot of stew in the slow cooker yesterday so I’m still working my way through that. It was based on a recipe I read here. I cubed up some pork, added a bunch of vegetables (parsnips, potatoes, turnips, and yams) and added a can of cranberry sauce and some soy sauce.
Cajun style pasta. I’m leaving out the shrimp, although I’d like to include it - El Hubbo doesn’t do seafood. Yes, another new recipe; we’ll see how it works. It’s from the same book as the crunchy baked chicken, and that turned out really well, so I’m optimistic.
Don’t know about tonight, but last night we went to the Laurelhurst Market for dinner. I had their smoked brisket and frites. The Ms had ribs with spaetzle. I was very impressed with the smoke, and while the fries weren’t that great, they were served with a side of mayo, which I haven’t seen done since I left Europe in 1995. The place does have a Euro flair to the menu, serving mussels with frites, etc.
The other two cube steaks, again with sawmill gravy… and a lovely and completely unseasonal salad of shaved zucchini, parsley, green onions and feta dressed with lemon juice and olive oil. Damn that was good. Winter can bite me.
I used up leftover steak, by making what we call “heavenly hash.” Carmelize some onions, then saute the sliced steak with the onions. Add diced potatoes, and beef stock, salt and pepper. Simmer about 20 minutes, then thicken the juice with a corn starch slurry. I served it with fried cabbage. (Saute a few slices of bacon, diced, then remove to paper towels. Add some onion, then diced cabbage. Add a bit of stock or water, and simmer until done. Sprinkle in the crispy bacon just before serving.)
Creamy cheese broccoli and cauliflower soup. I kind of made up my own recipe. It ended up being:
6 cups water
4 tablespoons Smart Balance spread
1 Knorr vegetable boullion cube
2 teaspoons “slap ya mama” cajun seasoning (I think it’s salt, garlic and cayenne)
1 teaspoon turmeric
1/4 teaspoon nutmeg
1 medium head of cauliflower
3 largish stalks of broccoli
4 oz cream cheese
8 oz Italian blend shredded cheese
1/2 cup half and half
I think that’s it. Very tasty, and made a ton, I think it ended up making about 3 quarts. I plan to take some to work tomorrow to share with a couple of people, one a total foodie and the other who loves soup in any form. I think they’ll really like it.
Ehh, was OK. Needed more salt (which I should’ve added; I tasted and everything!). And wasn’t really as “cajuny” as I was lead to believe. Needed to be smokier, or something. The sauce was a combo of milk, grated parmesan, flour, and sherry, and I think it tasted too flour-y. Maybe a roux would’ve been better instead of just whisking everything together in the milk as the directions stated.
Tonight I made pan-fried thin chicken breasts with farfelle pasta in a lemon cream sauce. Salad, garlic bread, and for dessert, leftover blueberry bread pudding with a lemon sauce on top. Yum!
