Reubens. Couldn’t wait til the 17th for corned beef and cabbage, so that was last night.
We had pan fried catfish, baked fries, cole slaw and sliced tomatoes.
I got some Uli’s chicken and apple sausages from the store the other day. Roomie is cooking them, and she’s also cooking acorn squash. And she made guacamole.
Pan-fried burgers, fried potatoes and fried onions. :: burp::
Still eating the creamy, cheesy, broccoli-cauliflower soup from a couple days ago. Added steamed/sauteed greens consisting of collards, kale and red chard with sliced fennel bulb and a little red pepper/garlic.
A pear for dessert. Maybe a piece of dark chocolate, too.
Baked ziti here, made from last night’s leftovers.

* Lemon Cream Sauce:
* 1/2 cup butter
* 1/2 large yellow onion, minced
* 1/4 cup white wine
* 2 tablespoons all-purpose flour
* 1 cup heavy cream
* 1 cup milk
* 1 lemon, juiced
I also added a couple handfuls of parmesean, and of course salt and pepper, at the end.
Melt butter in large saucepan over medium-high heat. Add onions and white wine; cook and stir until the onions are soft. Lower the heat to medium; whisk in the flour. Gradually whisk heavy cream into the flour mixture. Stir in the milk and remaining lemon juice.
It was sooo good. Not too sweet or too lemony, very creamy and tasty. Oh yeah.

That sounds incredible. It’s just enough lemon to cut through some of the fat from the butter and cream, and add a little tang in the background, not enough to smack you in the face.
Dinner is very important, in night dinner must be less spicy and not heavy, because taking spicy dinner everyday is most very bad for health. Sometimes it will generate some stomach problem… so I always prefer light food for dinner. Like Rice, salad., and all that.
Tonight is the obligatory corned beef and cabbage, with potatoes, onions, and carrots, in the crockpot. I look forward to this every year, although I don’t care for it enough to make it during the rest of the year. Plus, cheesecake!

We’re also having cabbage tonight. No one likes my cabbage dish, but it was on sale! I saved like twenty cents!
They’re just potato skins (baked potatoes with the insides scooped out, quartered and fried crispy) and anything you’d top nachos with. Mine had shredded, seasoned beef, fresh salsa, melted queso blanco, chives, cilantro and a little sour cream. They’re not for those who are hung up on watching their figures.
