Campbell’s Chunky Grilled Chicken and Sausage Gumbo, with a little shredded cheddar and some sour cream stirred in. HEAVEN! There’s a ‘healthy’ version, though something so good can’t possibly be good for you, but this is the best soup I’ve ever had. Toasted bagel on the side.
Really? I love me some Bittman, but I have to say that this latest recipe had me wondering. The big flat single sheet of pasta didn’t look particularly good to me. But you liked it? What was it like?
The kids have been clamoring for “breakfast for dinner” - their favorite, and a big time-saver for me - so I finally gave in tonight: Pancakes, eggs, cheese grits, bacon, and fresh fruit. Quick and easy, but terrible fat- and calorie-wise, so we don’t do it too often.
The current forecast is calling for cold and wet and messy and icy, so tomorrow will probably be soup or pot roast. Any great soup recipes? (Kid-friendly a plus - they aren’t picky, but the 10-year-old isn’t exactly an adventurous eater.)
The SO’s best friend’s parents were in town, so they took us to dinner. I had a crabcake sandwich with out-of-this-world cajun remoulade and fresh, vinegary slaw. He had a burger with these fresh twice-cooked fries. All were satisfied :).
Lacunae Matata, I make this Ravioli and Vegetable Soup from Eatingwell often, only I don’t use zucchini, I use an extra cup of diced bell peppers. Whole wheat packaged ravioli or tortellini, whichever they prefer. Also, I don’t used fire-roasted tomatoes - don’t like 'em. If the kids don’t like crushed/peeled tomatoes, just use tomato paste instead to give the broth a nice color and tomatoy taste without the tomatoes themselves.
I’ve been soaking some black beans in a pot over night, just set a chunk of pork and some onions in the crock pot to cook all day. Going for a cuban black beans and rice with some shredded pork! Let you know how it turns out!
I made pho ga last night. I’m not 100% satisfied with how the broth came out, so I plan to do more experimenting. My husband is making pizza tonight, so I’ll have to get into the kitchen and put together a salad to go with it. Someone upthread mentioned beets, which reminds me that we have one left that I need to roast.
French onion soup. Had some homemade beef broth in the freezer from last time, and the onions are currently getting the bejeebus cooked out them. Probably a spinach salad on the side.
White lasagna. Made with lasagna noodles (d’uh), layered with turkey that’s been leftover in the freezer since New Year’s Day, chunks of ham, Swiss cheese, and a creamy sauce featuring mushrooms and shallots. Parmesan and mozzerella also make appearances. It’s a favorite leftover-poultry recipe I’ve made for years.
Served with peas and slices of Trader Joe’s whole wheat Tuscan bread.
For dessert: homemade chocolate pudding cake with fat-free whipped topping.
