My roast went better than I had expected! I knew that if I told my husband the base for the sauce was cranberry sauce, he wouldn’t give it a fair shake. So I took the roast out of the slow cooker and made a slurry with some stock and cornstarch to thicken the sauce/gravy. I sliced the roast and returned it to the cooker with the gravy, let it cook/thicken for another 15 minutes or so. He loved it, and even came back for seconds! Not only that, but my middle daughter, who, despite being 20YO still eats like a 5YO, liked it as well! Not only is this ‘recipe’ (it’s almost too easy to deserve the title) on the ‘do again’ list, but next time, I’ll make a bigger roast!

I don’t know if roomie’s ever eaten lamb. Well, I do know she had a bite of my lamb burger once. She liked it, and said she liked the spices.
She’s also never had couscous. She said it was like nicely-done grits. She liked that too.

Mr Rebo made a pork tenderloin in the crockpot with BBQ sauce. So we had BBQ “pulled pork” sammiches, with cole slaw and baked fries. It was ok, but we all regret that he added cayenne to it.
I think I’ll make shrimp etoufee tonight.

However, that recent thread about people having trouble with pita bread spooked me, so we used tortillas instead. The family says it’s a keeper (and I am getting the pitas next time).

Gosh I really have no idea what to make for dinner. We were going to do Chickpea Burgers again and Pita Pizzas tomorrow (since Wednesday and Thursday we’re going out with family) but the store was out of wheat pita (and frozen brown rice…so bizarre) so I’m kind of stumped.
Suggestions? There are just 2 of us, we often eat vegetarian and our favorite piece of chicken is thigh.
I’m doubly stumped because we’re going to “nicer” places on Wednesday & Thursday, so we’re likely to eat seafood on at least one of those nights. I don’t know if anyone has seen this week’s Target ad, but ours has a bag of 1.5 pounds of frozen Wild Alaskan salmon for $9. That’s a steal 'round here. But I don’t want to have salmon back to back :p.
I dunno, you already missed National Grilled Cheese day.

Whew, guess who forgot to file their taxes? :smack: The SO helped and found a free Turbo Tax extension thingy, so thankfully that’s outta the way.
I think I’ll try these Baked Eggs in Tomato Parmesean sauce with a baguette on the side. Or maybe these Quesadillas. Guess I’d hafta trek back to the store and get some tomatillo sauce!
Teriyaki pork chops, baked potatoes with yogurt, and a green salad. Italian dressing on the salad. And some leftover rolls I made last night.

Tonight I made the marinade for the saigon chicken listed upthread.
Of course, I just saw ingredients and no directions; I’m not a noob in the kitchen, so just kind of improvised.
I ended up adding ginger beer and soy sauce, some honey to round it out, and simmering it down, with a touch of lime and sesame at the end.
I am drooling already!
What’s more important is that my sweetie tasted the marinade and HE started drooling, literally! This is big because I tend to play with my foods, and he doesn’t often care for the results. 
But I am pretty sure that tomorrow night we will have a winner

I woke up 2.5 hours before I normally do for work by accident so I was tired. My nap after work didn’t work out as planned so we had peanut butter & jelly of all things. Oh, t he shame!
However, I redeemed myself by just making some Ghiradelli brownies. They’re coming out of the oven in two minutes :D.
I don’t think she’s gained any. Actually, she may have lost a little. But she doesn’t eat much, especially on her work days. She works, sleeps, and does homework, and that leaves little time for eating.

We had Chefguy’s spicy balls for dinner.
Wait, that didn’t come out right. We had the lamb balls I made using Chefguy’s recipe. And the wild mushroom couscous. I had some corn on the cob, but roomie didn’t. And she left me one lamb ball and some couscous as well as the last piece of corn.
I was going to have a dish of Trader Joe’s caramel swirl ice cream for dessert, but roomie ate it. So I had a root beer float with vanilla ice cream and Trader Joe’s Vintage Root Beer.
So how did my balls taste? ![]()
We had salmon cakes:
cooked, flaked sockeye
chopped green onions
thyme
egg
bread crumbs/smashed saltines
Saute in a mix of butter and olive oil until hot through and crisp.
Served with chipotle mayo (1/2 cup mayo, 2 canned chipotle peppers, 1TBSP adobo sauce from the same can, sqeezed lime juice, food processor).
Last night was an easy one: leg quarters were $0.69 a pound, so I picked two pounds of those up with some chickpeas and, along with some onions, canned tomatoes, rice, and jar of Patak’s curry paste at home, made some chicken and chickpea curry.
Think I’m gonna make these baked eggs in tomato parmesan sauce. Served with a crusty baguette and a salad.
Tonight, it’s going to be braised beef shanks.
