Grilled pork chops with cajun seasoning and pepper, sweet potato fries with cajun seasoning and sea salt, green beans with just a touch of butter.
Breaded baked codfish, leftover lasagne, and romaine salad.

So I just say “Hot dogs and beans and butter bread” and they say “Yay!” ![]()
Pan sauteed scallops. Mixed green salad with balsamic vinaigrette, accompanied by herbed baked goat cheese rounds. Dessert was blood orange sorbet - a little odd, but good. Scallops were sauteed outside on the grill’s side burner, so the house doesn’t smell fishy. And they were smooth like buttah.
You could call the dish Salsiccie di Francoforte e dei fagioli.
I know a few people have used recipes I’ve posted and come back to say so only after making them, so if anyone is considering doing that baked egg dish - don’t do it! The sauce was watery and pretty icky. The baked eggs themselves were great, if I make baked eggs again I’ll probably do this dish.
Tonight is dinner out with the SO’s family :D. Seafood restaurant - I’m thinking crabcakes.

Roomie got some beef-barley soup from the corner market. She also made some tuna salad. So I had soup and a grilled tuna-and-cheddar sanga.
And she put curtains up in my room.
I made Italian sausage subs with peppers and onions, broiled with provolone.
Today was my long run day, so it’s pasta night! The lady got a turkey bolonaise, and I made some chicken liver, onions, bacon, and cream sauce for myself. I’m not sure why, but I’ve just been jonesing for liver all day today.
Tonight is hickory smoked barbecue chicken. Just perfect.
Unfortunately, my current medical issues caused me to be in a lot of pain all day yesterday; the pain is better today (thank goodness) but days like yesterday always leave me exhausted. I’ve managed to get a few things done today, but cooking dinner just wasn’t happening. So I took my girls out to a local diner. I had the fried shrimp boat. The good thing is it was the special, and there was lots of shrimp, so I have plenty of leftovers for breakfast!
Tonight will be beef satay with spicy peanut sauce. We just had it last week, so we don’t even have to make more peanut sauce. Really tasty!
Must go slice-skewer-marinate.
Vietnamese takeout. BBQ pork Bahn Mi sandwiches, fresh spring rolls with peanut sauce, little hand-formed sausages wrapped in something leafy green to dip in fish sauce stuff, and daughter’s strawberry-blueberry-raspberry-blackberry-kiwi-purple grape-Greek yogurt smoothies (she had a photography assignment calling for colored foods and we ate the results).
It’s Good Friday, so dinner’s going to be fairly spartan: a salad and some plain gnocchi.
Made crab cakes last night, a Paula Dean recipe. Surprisingly, it didn’t call for butter. I baked them instead of frying them up (as some recommended in the comments) - I was eating rather late and didn’t have the time to put the patties in the fridge for them to firm up before frying, and didn’t want to deal with them falling apart on me. Steamed broccoli on the side, and sriracha mayo for to dip. I didn’t have enough crab - the cakes were a little soupy - but were very tasty. I also used club crackers instead of Ritz, and shoulda cut back on the salt, but they still came out well.
El Hubbo is home tonight from a business trip, so I don’t know what tonight’s dinner is. We might go out. Heck, we might *have *to go out. I have crab cake leftovers, but he doesn’t like seafood. About the only other thing we’ve got in the house is makings for quiche. I might be able to rustle up some pasta concoction, too. Or I guess we could go to the store…
Oh - in the interests of recipe feedback. I made this Spicy Tuna Wrap from Eating Well earlier this week for dinner, and then again the next day for lunch. Very nom. It uses brown rice, arugula, avocado and carrots to round out the tuna, on a whole wheat tortilla. Excellent way for me to get more whole grains and really filling, plus quick to throw together. If you like tuna, I recommend it. It should go into my rotation for lunches, but I’m lazy, so there is that.
