What's for dinner tonight?

Lamb curry and stir-fried veg.

Dinner was chicken with string beans and brown rice. Dessert will be cinnamon toast from the Pioneer Woman :D.

Roomie made a Southwest salad. Apparently I’m out of BBQ sauce, so she mixed the ranch dressing with HP Sauce.

I made a very simple beef roast last night from a recipe book my kid brought home and selected. It was Coca-Cola roast beef. I used a 2.5-3lb bottom round roast, seasoned both sides with salt, pepper and powdered ginger (the recipe didn’t say anything about salt and pepper, but I seldom cook meat without them); then put it in a roasting pan, sprinkled an envelope of onion soup mix over it, poured 8oz of tomato sauce on top. I surrounded the whole thing with about 1L of Coke (not diet), put whole baby potatoes in one end of the dish and whole baby carrots in the other end. I cooked the whole thing at 350 for about two and a half hours. The recipe said to just serve the extra juices as a sauce, but the hubby likes thick gravies and sauces, so I strained the leftover juices into a small sauce pan, and made a slurry of Coke and a tablespoon of corn starch, and thickened the sauce with that.

I served steamed peas with pearl onions and sauteed mushrooms along with it.

Everyone agreed it was a ‘do-again’ recipe!

I can’t be a gourmet cook every night.

Had beefy rice-a-roni with ground turkey, & peas for the veggie. For dessert, mini truffle candy eggs. Simple and fairly tasty.

Fried smelt tacos. Plus I tried out the Cook’s Illustrated cold oil French fry method. Basically, summarized as: cut Yukon Golds up, cover with peanut oil in a Dutch oven or other deep pot (I just used a sauce pan since I was only making a coupe of potatoes), add option bacon grease (I used some rendered beef fat I had lying around) and cook until they’re done. It actually turned out pretty well, with a light crispy outside, and very creamy interior. A bit less hassle than the traditional double fry method, and no need for thermometers.

Strawberry shortcake. Yup. That was dinner.

Tonight I am making meatloaf, cooked with bacon on top. And baby portobello mushroom caps, stuffed with a mixture of mushroom stems, onions, parmesan cheese, panko bread crumbs, and spinach. Yum!

Bacon wrapped pork tenderloin, green beans and more strawberry shortcake - but a much smaller portion than yesterday.

Baked chicken, with herb butter under the skin. With wild rice and steamed broccoli and cauliflower - with cheese sauce.

Salsbury steak and mashed taters and gravy. Also, peas.

Meatloaf, and a side of polenta with asparagus from Trader Joe’s. At least, I think that is what I bought.

Shrimp curry with tomatoes, onions, garlic, olive oil, lime juice, and ginger. And a kiwi fruit.

We made this chicken salad with strawberries. I thought it might be too light, but just added some biscuits and it was a big hit.

Stir fry with bell peppers, baby bella mushrooms, onion wedges, baby corn, broccoli, carrots, sugar snap peas, cabbage - and other stuff I forget. I bought a mix at Trader Joe’s; for $4 you get over a pound of stuff that probably would have cost almost the same if I put it together myself. I’ll cook it in sesame oil and add soy sauce, garlic, ginger, and whatever else I think sounds good :p. I’ll throw in a couple chicken tenders too. Served over brown rice.

Last night was duck legs with new potatoes, crimini and ramps.

To night will be either Rogan Josh or Fettuccine Alfredo with grilled chicken and broccoli.
