Fried tacos stuffed with mashed potatoes, poblanos, fried onions, and cheese.
I slept six hours last night. This morning was a hellish commute. I’ve felt out-of-sorts all day. 110-mile commute home. In short, I’m beat.
So you’ll understand why I originally read that as ‘ground elf tacos’.
Dinner with friends tonight.
Some BBQ with pepper vinegar, cornbread, slaw and Brunswick stew from a little family owned place here in town that’s only open on the weekends. Good stuff!
Post-Rapture Special: large sausage pizza from Wegmans. Though it was so big that it filled up the entire space in the hatch of the car, it was as thin as a promise and really no better than a generic mall pizza. However, it was tolerable, fed us both, and there’s plenty more for lunch tomorrow.
Baked beans and corn are warming on the stove. A couple of rib-eyes are on the barbie.
Beef tenderloin, sauteed mushrooms and onions, some salad-y greens and blood orange sorbet for dessert.
I had every intention of making roasted rosemary chicken with red potatoes for dinner tonight; even had the chicken thawed! But the afternoon was beautiful and mudgirl asked if we could please, please, please go to the park. I knew that if we went to the park, I wouldn’t have time for roasted chicken. But going to the park on a gorgeous Sunday afternoon takes precedence over dinner plans, IMHO. So I put the chicken in the fridge (I’ll cook it tomorrow) and took them to the park, came home and made beanie weenies for dinner!
Delivery. Pepperoni, mushroom, and olive pizza and side salads.
Apricot chicken in the oven- consists of chicken thighs covered in a mixture of apricot preserves, onion soup mix, and Russian dressing. Also roasted brussel sprouts with bacon and walnuts, rice, and for dessert, strawberry shortcake. My s.s. is so good- a big shortcake made with Bisquick, homemade whipped cream, and strawberries with sugar. How could something so simple and easy be so goddamned good?!
I made babyback ribs, baked beans, cole slaw and corn on the cob. Dessert was peach pie ala mode.
Welcome to summer, baby!
Phony crab salad with onions and lemon juice. Hummus and lentil chips. Fruit.
No, no. Elf tacos are only for birthday dinners.
Homemade pizza tonight after the mister’s long, hard day of dirt biking.
Salmon and cheddar melt at mom’s retirement home.
Yesterday, lunch was dinner: Oysters on the half-shell, Copper River salmon bisque, and blackened rockfish tacos.
Tonight? I’ve just made a batch of Cajun rub. I mixed up a bunch of stuff (basil, oregano, thyme, onion powder, garlic powder, salt, pepper, coriander, lemon juice, lime juice, salad oil) and put some country style pork ribs in a zip-top bag with the marinade to… well, marinate. The plan is to let them marinate for a couple of hours, and then start up some coals. I’ll put the coals on one side of the grill and the meat on the other, cover, and cook it until the meat is done. Then I’ll slather them with BBQ sauce and put them over the coals to finish.
Chicken parm.
Ok -
Shrimp are skewered (with pineapple chunks!) Veggies are chunked and skewered also. (Peppers, mushrooms, zucchini, yellow squash, shallots.) And I have some asparagus ready to throw on the grill, too. Pasta water is ready to turn on to boil. Sippin’ my drink and relaxin’ for a minute.
(Also quoted from the MMP.)
Leftover chicken tikka and saag paneer from last night. (We made vats of food, so the leftover black chickpea curry and spicy Punjabi eggplant with potatoes are going in the freezer.) Homemade mango chutney. Haven’t decided whether the starch will be more Basmati rice, or heating some frozen naan.
Chicken and cheese fajita pockets at Casa Janis. Nom.
Ate dinner at a BBQ party- grilled brats, maple-glazed pork tenderloin, roasted corn on the cob, potato salad, coleslaw, maple cupcake with bacon bits on top.
This sounds delicious!
