What's for dinner tonight?

Tonight my husband is making pizza, thank og. I’ve pulled out all the stops this week.

Grilled steak with fried potatoes and asparagus
Grilled pork chops with mashed potatoes and cole slaw
Black beans and rice with cole slaw
Falafel and warm tomato salad
Hamburgers, tabbouleh, zucchini salad, and homemade raspberry ice cream
Fish tacos with homemade guacamole and pico de gallo, homemade rhubarb pie

I didn’t do the Cajun rub. I pulled the ribs out of the marinade and thought, ‘Wait. Cajun rub is a dry rub. This isn’t going to work.’ They did take longer to cook than when I’ve thrown them over the coals, but they still cooked more quickly than I wanted. I’ll have to experiment a bit. Roomie pronounced them very good, and she liked the bottled sauce I used. She must have liked them, because she ate two ribs to my on and a half.

I used those leftover potato wedges. I just fried them in olive oil with some salt and pepper. I had some sour cream on mine. I also made some corn.

Today’s menu includes cream of mushroom-bacon soup, and a dish I make where I cut up bratwurst into pieces and cook it with potatoes, green peppers, onions, and onion soup mix.

Last night I made fusilli pasta with blue cheese, toasted walnuts, and balsamic vinegar. I could have sworn I saw Giada make this on the tv, but I couldn’t find her recipe, so I winged it. It was very good, but my 12 year-old, who likes everything, didn’t like it. Oh well, more for me.

Plan for the upcoming week (short, because of Memorial Day:)

pesto shrimp, soba noodles, salad
steaks, fried potatoes, salad
pulled pork bbq, cornbread, cole slaw
chicken stir fry
pork chops, ratatouille
salmon, beets, salad

Memorial Day, so that means simple and grilled: burgers, potato salad, cole slaw, beer. Lagunitas “Little Sumpin’ Sumpin’ Ale” to be precise.

Tomorrow will be fried chicken. Out for Thai Wednesday. Carnitas Thursday. Friday who knows?

A friend called me from Seattle today. She was at Saigon Deli and wanted to know if I wanted a bánh mì. Unfortunately, today’s a holiday I wasn’t in Seattle.

Today it was fajitas (specifically, skirt steak) and Cornell chicken, both on the grill, of course. Also, grilled asparagus and corn on the cob.

mac and cheese with broccoli tonight. I was out of town most of the weekend and didn’t bother trying for something holiday-ish.

Tonight it was gazpacho with shrimp; tomorrow, a new chili recipe.

Almond apricot chicken and grilled fruit skewers.

Roomie sent an email saying she’s planning on making pizza. I assume that means heating the one I saw in the freezer. But she’s asleep now, so who knows what dinner will be?

Seared scallops, dry-aged NY strip and asparagus, served with a butter-garlic-lemon-thyme sauce.

We didn’t have pizza last night. I don’t remember what I scrounged. Today has been Leftover Day. Or more to the point, Human Garbage Disposal Day. Breakfast was the last BBQ country pork rib leftover from Sunday. Lunch was the rest of the potato wedges from last Thursday. (I made ‘fry sauce’.) I was poking around the fridge and I found dinner: Soy chorizo leftover from who-knows-when, mashed potatoes I’d made to eat with the chorizo, and corn from… Sunday? Mixed it all together and nuked it.

There’s still some bean soup from a couple of weeks ago, and pho from last week. I think those are just going to be tossed.

Thai chicken lettuce cups.

Ground chicken with fish sauce, basil, hot chili, etc. etc. wrapped in butter lettuce. The store now sells ground chicken which will make this much easier to prepare. We’ll see how the texture comes out. I expect it will be better with a more uniform grind than we can produce at home.
