What's for dinner tonight?

Skirt steak tacos.

Marinated skirt steak and bulb onions grilled to a nice char over natural lump charcoal.
Stuffed into warm tortillas with sliced jalapeños, queso fresco, shredded lettuce, crema, and pico de gallo.

Turned out quite nicely

Tequila-and-orange marinated chicken (packaged and marinated in the cooler at Fresh & Easy) with a side of sweet potatoes, black beans, corn, red pepper, and onion (all together in a frozen bag that I had to cook). A bottle of Miller Lite washed it down (my beer budget is low right now).

Two chocolate chip cookies from the dough I bought as a fundraiser at work as a dessert, with a mug of whole milk.

My 17-month-old daughter had some of the veggie mix and some edamame, as well as a cookie of her own.

Chinese take-out.

A friend is coming for tea/coffee/snack time. We will make a long, leisurely meal out of it. In addition to coffee/tea service, there are apple wedges with cheese, chips and guacamole, salmon dip and crackers, cucumber sandwiches, popcorn, ginger lemon cookies, and brownie bites. If we hang around long enough, there may be grapefruit sangria later.

Going to make my 5 hour bolognese sauce today. Yum.

Where’s my pancetta ?

Last night I made two new entrees. Butter Chicken and Chile Verde.

For years, I’ve been trying to figure out generic chicken curry from your run of the mill Indian restaurant. I’ve figured it out! It’s Butter Chicken or Murg Makhani. The secret is lots of butter, whole cardamon seeds, cinnamon, almonds and cloves, roasted in a frying pan. Delicious!

The Chile Verde came out pretty good too. One more dish figured out for my overseas taco stand!

Sauce on the verge of simmering, will be ready in one hour.

Adding sprigs of fresh thyme and rosemary now.

Someone in the hot dog thread said Ball Park Franks are pretty good. So I have a package of Ball Park All-Beef Franks in the fridge. I’m thinking of ‘grilling’ a couple on a cast-iron skillet and putting them in buns.

I have chili in the cupboard, and cheese in the fridge. Also, red onions. Chili-cheese dogs? I don’t know yet.

Meatball stroganoff with egg noodles, and fresh green beans simmered with ham.

Lemon-garlic chicken skewers from the local grocery store with a veggie medley.

Elk cheese burgers, steak fries and broccoli.

Brunswick stew and sauteed fiddleheads tonight.

Fiddlehead ferns? Dish. By which I mean, spill your secrets.

Yup, ferns, but I’ve not much to spill. When buying, choose the smaller fiddleheads. The bigger ones are more fibrous.

Wash and trim the ends off of about a pound of fiddleheads. Boil them for 7-10 minutes in salted water, until tender. Drain, and sauté in a generous amount of olive oil with a clove of garlic, minced, and salt & pepper to taste. Sprinkle with fresh lemon juice and serve.

Nothing fancy there. There’s a more elaborate Indonesian preparation of the things called Gulai Pakis that I mean to try, but it calls for some difficult to acquire ingredients (Kaffir lime leaves mainly) and I’ve not gotten around to it yet.

Lamb burgers served on an Italian sandwich roll with chevre, arugula, some stone ground mustard doctored in equal parts with crushed blackberries and honey, finished off with some thin slices of raw onion.

Onion and garlic sauteed a little, then cubed sweet potato added, cook until tender.

A salad of green pepper, a little bit of minced onion, chioggia beets, mushrooms, half a squeezed lemon, extra virgin olive oil, cracked pepper, with a little romaine.

4 cups of cottage cheese, a glass of chocolate milk, a single piece of Ferrero Rocher, a couple carrots, and some low-fat yogurt.

Shrimp etoufee and rice, with garlic toast.

The brinner thread has me hungry for eggs. I bought some yard eggs on a weekend trip, so a Florentine omelet, some sliced tomatoes, toast and a cup of coffee.

It was 98 degrees here today, no air conditioning. Anyone who is hungry is on his own. Myself? Iced coffee, cottage cheese, a mineola tangerine, and later - Ben and Jerry’s limited edition Blondie Brownie ice cream, nom.
