What's For Dinner?

Bratwurst cooked in beer, Hebrew National saurkraut, Jewish rye bread, and Natural Ice beer! Ah, I can feel the arteries clogging as I type.

Probably minestrone. We have a whole freezerful of thin tomato sauce because the garden went crazy this year.

Well, I would have brought the bottle of Chilean wine that I have sitting on my bar cart, however, the SO and I ended up with salad (lettuce, onion, broccoli, feta) and this stuffing-topped turkey pot pie thing from Presidents Choice. Pretty damn tasty.

Skinless baked Perdue chicken thighs (approx. 140 cal. each) with salt and pepper, frozen cut green beans nuked (no butter, approx. 50 cal. worth), prefab mashed potatoes, also no butter, also nuked. (Mashed potatoes were for the boyfriend, so I don’t have to count those.)

Diet iced tea complimented this simple yet tasty meal. (Total approximate calories for my meal: 330.)

Pfftt.

For dinner break at work tonight I feasted on Lean Cuisine Teriyaki Chicken, diced peaches, a Yoplait blackberry yogurt and a couple of Fig Newtons.

When I go home tonight I’m considering throwing some rice and lentils into the rice cooker along with whatever frozen veggies are around.

Or possibly just eating Fritos.

I had a bowl of Cheerios.

Well, tonight was pizza. Last night, though, was Smoked Whitefish Chowder. Bacon, celery, onion. Throw in some butter. Throw in some flour, make a roux. Add whole milk, cream, clam juice, and some chicken stock. Meanwhile, I boned some locally smoked whitefish - only about a cup, cuz it’s strong. Then I boned and skinned a fresh Lake Superior Whitefish fillet. This fish was swimming in the Lake that morning, in my pot in the evening. Cut it into chunks. Add the smoked whitefish to the pot, along with some corn. Let that cook a bit to get the smokey taste through the soup. Then add the chunks of fresh whitefish and let them poach. Serve with crusty sourdough bread. Heaven!

Man, if I’d read this thread before dinner, I’d have been on my way to other people’s houses, post-haste! I’m coming down with a sore throat and swollen lymph nodes, so didn’t really have the energy to cook (which I normally love to do). When I fell scummy, I crave carbos, so dinner was leftover polenta with tomato/mushroom sauce and some dill havarti melted on top. Washed it down with organge juice, and for dessert, unfrosted strawberry Pop-Tarts with Nutella.

I slept through dinner time. But I did have some KFC popcorn chicken and mashed potatoes with gravy when I got home from school. (I dip the chicken in the mashed potatoes. Everyone thinks I’m weird. I learned it from my mom.) I love popcorn chicken. So little and cute and full of bite-sized tastiness.

Navy bean soup with kalamata olive bread. For dessert, ginger snaps and milk. We’re a bit under the weather, and this is comfort food time.

We had pepper-crusted salmon, spinach and rice. Came out rather well if I say so myself.

Should we move into “What are you having for a midnight snack?”

so that’s why there’s meatloaf tonight… :wink:

Well, shut my mouth! Got home last night, Mrs_clubber had already made (scratch) mashed potatoes, beef tips over noodles, corn…I’m unworthy.

OTOH, her meatloaf sucks.

Tonight, it’s sesame seed beef and vegetables, served over noodles, I think.

If you want some, you’d better hurry. We’ll be eating in an hour :wink:

Not too much tonight - I have a big lunch out today (paid for by someone else - yay!). Planned so far is a can of spinach (I’m Popeye!) with part skim mozzarella mixed in, and ice cream. Might have an Amy’s organic pizza toaster thingie - or I might go with a Lean cuisine meal (I have a couple choices).

Now - ask this question on the weekend, specifically Sunday night, and that’s when I can give a more interesting answer. This weekend I plan on trying two new recipes, and one I have done before. For Sunday night, it’s Spinach and Mushroom Lasagna - from one of my many healthy cooking cookbooks (I think it’s Betty Crocker, but I’d have to be home to check). For the week, it’s Sweet Potato Carrot muffins from Cooking Light, to be served along with Roasted Pepper Tomato soup from Weight Watchers.

I do love to cook!

I don’t feel like really cooking tonight so it’s Zatarain’s Creole Chicken Mix…but I will toss in some fresh andouille for a faux jambalaya type thingie.
