What's for Dinner/

I had to make an unplanned frittata because our new chickens are egging us to death. I tried to use up some of our leftover mashed potatoes in it and also added bacon. Don’t know exactly why, but the dern thing just wouldn’t come together. In the end, it looked like an ungodly mess, but I ladled some leftover red pepper bisque over it and we ate it anyway. It was delicious! Unfortunately, it looks so unappetizing that I’m probably the only one in the house who will eat any more of it.

Hah! I routinely throw leftovers together to form a new dish. On the plus side, they’re often very good. On the minus side, they are impossible to duplicate.

I’m making chicken nuggets and I’ll mix together some honey mustard sauce. I haven’t decided what else I’m going to have yet.

Soppressata with a variety of pickled veggies. Made by a chef friend of mine after he learned that I’d never had soppressata.

Gulf shrimp sautéed with garlic, fresh jalapeño, heirloom tomatoes, parsley , green onions over a creamy cheesy, polenta. Slaw made with balsamic and olive oil.

Seared ahi, and sticky rice.

I was on the road today. I had a chicken parmesan sandwich from Burger King. It was actually pretty good.

We’re doing takeout sandwiches tonight.

Grilled salmon, pearl couscous with heirloom tomatoes, fresh mozzarella, basil dressing. Bib lettuce salad.

For the Ukulele Lady and Little Banjo’s cute Czech vegetarian girlfriend, “zucchini noodles” (thin strips of squash cooked by pouring boiling water over them for about 30 seconds) tossed with fresh herbs, pistachios, and ricotta.

Little Banjo and myself will be sharing a grilled rib steak and a gratin Savoyard made with some horseradish cheddar we brought home from a Maine cheesemaker last week.

Tossed salad, “Three Little Pigs” pizza with pepperoni, sausage and bacon, ice water.

Last night was Chicken Tortilla soup, with fresh tomatoes and peppers from the garden.

Envious. My tomato plants are still only flowering.

Bought a couple pounds of “field-grown” New Jersey tomatoes at the farmers market yesterday, and made my first batch of Goddess-Kissed Gazpacho* today. Even they looked a little premature. My area doesn’t really give out the perfect local tomato until the last week of July.

Kofta and saffron rice (with raisins and toasted almonds), chutney. And a glass of sangria.

Chicken Dijon and lettuce sandwich, cheddar Sun Chips, ice water, cherry pie, vanilla ice cream.

Pasta, meatballs, and Italian bread

A couple pounds of baby eggplant and summer squash marinated in olive oil, basil, and garlic, then grilled.

A pound of flank steak marinated in a homemade teriyaki – fresh ginger & garlic, sake, mirin, soy, sesame oil – grilled for five minutes on a side. Ears of fresh corn thrown on at the same time.

Young Banjo has his new girlfriend over the the Czech Republic, so we are dressing to impress.

Tossed salad with blue cheese vinaigrette, fried chicken, rosemary french fries, two Great Lakes Dortmunder beers, ice water, mini Key Lime tart.

Mac and cheese

Live Dungeness crab, hacked in two with my cleaver and a mallet, cleaned, and boiled in salted water for 11 minutes. With melted butter, corn on the cob, and Larry’s Cheddar Cheese whipped potatoes.
