Today it was back to pork schnitzel, mashed potatoes, and broccoli with parmesan and pecorino.
1/2 lb. of Dove chocolate and 1/2 an apple strudel drizzled with caramel sauce.

Spaghetti and homemade meatballs made with ground beef and Italian sausage. A semi-Sunday gravy, if you will. Meatball sandwiches tomorrow!
Went to my parents house for venison roasted with onion & tomatoes along with baby baked potatoes. Nice break from the chilli and she sent leftover meat that’s destinated for the crock pot.
Cuban sandwiches again. My husband smoked a big old pork loin Sunday, so the planned menu has kind of fallen by the wayside this week as we incorporate pork into everything.
Just finished baking a chicken pot pie. The crust is Pillsbury premade, but I made the sauce from scratch in the fond-coated pan I used to sear the meat.
The texture is a bit runny, but the homemade flavor really shone through!
Oops, I meant to add - partially for my own benefit - that I mostly used these two recipes as guides:
Ridiculous nachos. Tortilla chips sprinkled with crumbled Humboldt fog cheese, topped with pork/beans/salsa/bbq sauce/onion mixture and broiled til the chips are toasted, the cheese melted and the sauce caramelised. Then slices of radish and avocado, lots of cilantro, crema if we have any left. I usually slide the foil right off the baking sheet onto a serving tray and we pick at it as we watch TV.
Meatball sandwiches with provolone and marinara, toasted under the broiler until the cheese is melty.
Oh wow, I only now - an hour into tomorrow, local time - realized that I made a pie for Pi Day.
I mean, uh, that was totally on purpose!
An angry, angry 5-year-old who was way beyond tired meant we weren’t free to eat till about half ten. So the final slab of frozen chilli was microwaved, jars of salsa and guac left over from last weekend’s surprise party were dumped alongside it, and all the above were shovelled up with tortilla chips and sluiced down with nowt-special bottles of Heineken.
About as welcome as welcome could be.

Making a posole/tortilla soup hybrid tonight, with chicken & black beans & hominy. I bought a couple of avocados for it, so … hopefully I didn’t manage to just get one that’s underripe while the other’s too far gone already.

Local Cajun cart is offering up a crawfish pasta dish with smoked sausage. Think we’ll give it a go.
Fried rice. Some of the remnants of last night’s roast belly pork, chopped and stir-fried into rice with the usual suspects: spring onions, ginger, garlic, peppers, etc. Oh, and eggs, obviously. Flavoured with more of the usual suspects: soy sauce, sesame oil, shaoxing wine, lemon juice.
Nice and simple.
Tonight it’s breaded chicken, oven roasted potatoes and green beans with bacon. There’s some leftover cake for dessert.
Bangers and mash with onion gravy and probably gonna get some peas or other vegetable in there, too. There’s an Irish butcher around here that does their own corned beef, bangers, black and white puddings, and, whilst picking up the corned beef for St. Patrick’s day, I spotted the bangers so got a hold of them, too.
Woohoo, just made a Thai Red curry that was the first Thai style curry I have made that I rate more than a B-.
The secret was accepting my suckitude in the genre and using jarred curry paste as a base and adding some enhancements, rather than trying from scratch.
