What's for dinner?

Stir-fry with cabbage, onions, shitake mushrooms, and tofu over brown rice. Although actually I would kill for a pepperoni pan pizza.

The Ukulele Lady had a large Saag Paneer, made with silken tofu instead of paneer, with brown rice.

I attempted to re-create a magnificent cheeseburger I had years ago in Sioux City, South Dakota, made with cream cheese and green salsa.

Utter failure. Even though I cut the cooking time (in a pan) to four minutes on a side, the meat came out dry and slightly overcooked, without getting the proper crisp browning; whipped cream cheese is no good for this, it melts and squooshes out; roll too bready where it should have molded more closely to the filling; and the salsa needed more heat, should have added pickled jalapeños.

Scrambled egg on a low-carb tortilla, with shredded cheddar cheese and half a dozen pickled jalapeños, a glass of V-8 juice, and a quarter cup of mixed nuts.

Tonight I’m going to try one of Kroger’s “Prep-Pared” meal kits. I’ve had the vegetarian black bean and quinoa stuffed blistered peppers with sour cream and it was actually very good.

Tonight it’ll be coconut curry infused seared chicken breasts with lemongrass, basmati rice and green beans. The pricing on these kits ranges from $13-20, which seems a little steep for a meal for two, but everything is really fresh, neatly packaged and all the front end prep work is done for you so all you do is marinate the chicken for a bit and sear it in a skillet with butter (provided!) and chopped onions.

Alton Brown’s Slow Cooker Short Rib Queso, with an assortment of veggies for dipping. More of a “sitting around sipping cocktails and munching” than “dinner,” but it still counts.

Debating whether I count tonight as “passover”. If I decide not, maybe Japanese.

I’m getting the husband to take me out for pizza tonight. :cool:

The chickens are egging us out of house and home, so the theme for the upcoming week is “We’ve Got To Eat These Friggin’ Eggs!”
Quiche, frittatas, egg burritos, “dish that is somewhat but not entirely unlike quiche”, etc.

Spicy Szechuan Shrimp Linguini, first time recipe, pretty great.

A chuck roast with potatoes, parsnips, and the last of my winter crop - home grown rutabaga, carrots and cabbage. A rare Spring cold front is blowing through, so I won’t feel guilty about heating up the house with the oven.

Pancakes, and Mr. Patx2 is making them, yay!

Trying out a venison & adobo sausage tonight, in a 15-bean soup.

Potato soup, which I will be making from scratch. I have never made soup from scratch before.

Cutting out most carbohydrates, especially bad ones, and cutting down on fat. I want to lose 20 pounds by June 12th.

For tonight, we currently have lamb chops marinating in pomegranate juice, garlic, black pepper, and mint. Haven’t decided which if the veggies we will cook with it, maybe cauliflower.
