What's for dinner?

Going to try making tortiglione (like rigatoni) alla carbonara tonight for the first time. I hear it’s super easy and super good but I’m squicked out by raw eggs so I hope it cooks and turns out yummy.
Tomorrow I’ll make my first-in-a-long-while homemade pizza crust as an excuse to enjoy fresh burrata that we got yesterday.
Now that I’m writing this I might switch nights so the cheese is fresher. hmmm.
If these both work, I’ll be very happy. And full.

Very large homemade jalapeño poppers, two each.

Maybe white asparagus? Visiting a friend, so I’m not certain.

Shrimp, rice, and spinach salad.

Eggsperiment: Italian vegetable custard, plus salad, and yeah we still have leftover brisket if there just has to be meat.

Tonight is improvised Gulf (as in Persian) chicken, vegetable, and rice pilaf in the Instant Pot: onions, red and green bell peppers, garlic, chicken thighs and drumsticks, diced tomatoes, basmati rice, and some Gulf baharat (spice mix) that I just couldn’t resist at one of our local Middle Eastern groceries. Tom Scud is currently sous-cheffing.

Today, I riffed on some Northern Wisconsin/Minnesotan booya(h). Apparently this is some regional dish influenced by the Belgians or something. I only just encountered it this weekend in Green Bay. It’s basically somewhat along the lines of burgoo or Mulligan stew or things of that nature. Apparently popular towards the end of October with church fundraiser, where it’s made en masse. Anyhow, my version was a beef and chicken stew base with: onions, carrots, rutabaga, kohlrabi, potato, green beans, baby lima beans, peas, carrots, celery, corn. Salt, pepper, paprika as the seasoning. Nice, belly-warming stew/soup.

Pasta, meatballs and Italian bread

I was glad we had that brisket. The “custard” turned out to be more of a vegetable side dish than the meatless main dish I was picturing. Also, I didn’t actually measure the zucchini and used quite a bit more than was called for. It was good though. If you put a lot of cheese and seasonings on stuff it usually is. :slight_smile:

Cubans tonight! It’s a household favorite.

Last night, a riff on cashew chicken stir fry. Chicken thighs cut up and seasoned with star anise, ginger, black pepper, green cardamom, sesame oil, and guajilla chili powder. Added baby bok choy, red bell pepper and shanghai noodles and a couple of handfuls of organic cashews and mixed 'er all upwith a generous dose of hoisin. Served it up with a glass or two of Jacob’s Creek Le Petit Rose. Dessert was Passion Flakies.

Tonight will likely be Bison Cheddar smokies with spicy mustard on italian rolls and a green slad with a Benjamin Bridge Nova 7.

Trader Joe’s Turkey Burger patties, and Spring mix salad.

The turkey burgers were not ‘burger-y’. They tasted like breakfast sausage. We liked them. (They’re seasoned with kosher salt and rosemary.)

Tonight: Baked tilapia with capers, and steamed broccoli.

Roasted red pepper bisque and grilled cheese sandwiches. In honor of the holiday and also because I didn’t remember to defrost anything. :slight_smile:

Giant vat of vegetable stew with chickpeas. Threw 1.5 cups of dried chickpeas in the Crock-Pot this morning before work. Got home and diced and fried up the following in olive oil, in order of addition:

1 huge onion
1 small eggplant
Several cloves of garlic
1 green bell pepper
3 red potatoes
1 large-ish zucchini
1 medium yellow summer squash

Added 1 large can of fire-roasted crushed tomatoes, a sprig of minced rosemary form the back porch, some freshly ground black pepper, a bit of crushed red pepper, some celery seed, maybe 1t smoked paprika, and another glug of olive oil for good measure. Added a couple tablespoons of balsamic vinegar. Threw in the cooked chickpeas and simmered until the potatoes and squashes were done. Ate with some good shredded Parmesan. Lots of leftovers for lunch!

I was traveling today so dinner was a drive-through stop at Taco Bell.
