My earlier response ignored the weekends. For Sunday brunch we often have oat pancakes, which I thought might appeal to this group based upon some of the other responses …
dry ingredients:
3/4 cup oats
3/4 cup whole wheat flour
3/4 t baking powder
1/4 t baking soda
3/4 t cinnamon (or more to taste)
1/4 t ground ginger
wet ingredients:
1 C milk
1 egg
2 T oil
1 T honey or molasses (we always use the latter)
mix together all dry ingredients
mix together all wet ingredients
whisk the dry into the wet
cook like normal pancakes
eat
Weekday, no work: nothing til lunch, lunch is white coffee and two slices of toast with butter.
Weekday, work: a brown scone with butter and either white coffee, or a large fresh squeezed juice from the juice bar in the hospital lobby. Usually something with carrot, mango and ginger in it, but variety is the spice of life.
Weekend: reheated leftover pizza/chinese if we got a takeaway the night before, otherwise two slices of toast with jam or peanut butter, and white coffee. If very hung-over will have a grilled bacon sandwich with ketchup, but I grill (broil) the bacon, not fry it.
Anything more hearty than toast makes me sluggish all day, unless there was alcohol the night before, in which case I need meat and grease. Hence takeaway leftovers and bacon butties.
…and I eat a bacon, egg, and cheese croissant sandwich, a lemon-filled doughnut, and a medium coffee with cream and sugar, all provided by the generous folks at Dunkin’ Donuts.
Spaghetti-O’s with meatballs, Patio chicken burritos, or a ham and turkey sandwich on white bread.
The list used to include 5 cheese texas toast garlic bread, but the girlfriend has forbidden this practice based on the anecdotal evidence that this is gross, and the smell first thing in the morning makes her want to throw up.
During the week, I eat neither breakfast nor lunch. I’ll have a cup of coffee in the morning – however many ounces are in a Starbuck’s grande size – and lots of bottles of water during the day. No food until dinner, though.
On weekends, I whip up quite the breakfast platter: homemade waffles, pancakes or biscuits; scrambled eggs with tomatoes, cheese, sautéed onions capers, smoked salmon (give or take a few ingredients); omelets; grits; frittatas and/or tarts.
I’m not a morning person and have no appetite at all for at least a few hours. I usually pack food for work–salad for lunch, yogurt, etc.–as it’s usually much better in quality than anything I could buy quickly.
I pack oatmeal for “breakfast”, usually eaten at my desk around 10:00 a.m. It’s ridiculously easy. The night before I jusst bobbit some regular (not instant) oats into a plastic tub w/ a close fitting lid. Sprinkle in just a titch of salt, then add cold milk. I usually toss in some sunflower seeds or nuts and dried fruit. (Never raisins because I don’t really like 'em; prefer dried cranberries, currants or apricots.)
It can be eaten “as is” but I usually just nuke it for about a minute or two to warm through. In summer I eat it cold, with a dollop of plain yogurt and chunks of whatever fresh fruit is hanging around.
I take in a jug of decaf chai iced tea (Celestial Seasons usually) to drink during the day.
Though I can happily tuck into a full breakfast of bacon, eggs and toast if I’m on vacation. Go figure.
On a workday, when I’m usually in a hurry, it’s mostly cornflakes followed by Nutella on toast. For the past month though, I’ve replaced the Nutella with Hagelslag (Dutch chocolate sprinkles). Once my stock of Hagelslag is finished, I’ll go back to Nutella.
On days that I do have time, I might skip the cereal for a friend egg and some sausage or salami, topped up with Nutella and orange Tang.
Sunday is usually a big breakfast: cheese and mushroom omellete, cold cuts, all sorts of marmalades, peanut butter, and yes, Nutella.
I have to be in the office at either 6:30 a.m. or 8:30 a.m., depending on which of two shifts I’m on, and so eat breakfast at work. Fortunately my employer puts on a good spread - those individual-portion boxes of cereal, bread and bagels for toasting, fresh fruit, juices, coffee, tea. I usually have a bowl of cereal (Special K or corn flakes) with milk and a couple of bunches of grapes. On weekends I usually have corn flakes with milk, an orange and an apple.
