Mama, I haven’t used a Dictaphone in years, and it was almost always for business memos, and, rarely, business meetings. I forget, do you do medical transcription or legal stuff? That’s a whole different vocabulary.

chaoticbear, the problem with trying to use it outside is that the vent may not be reachable from outside. Plus, you’d have all that stuff blowing out into the laundry area. ick! (Mama, if you do this, be on the lookout for escaping socks.)

Morning all! Nice OP, swampus! It must have been a chicken kind of night last night, 'cause we had chicken for din-dins too - Sour Cream Chicken Enchiladas. Et voila (sorry, no grave over the “a”):

Ingredients
1 generous pound of chicken boobs, diced
8oz sour cream
1 bunch of coriander leaves (aka cilantro), finely chopped
8 tortillas (flour or corn, your choice - I use Tumaro’s gourmet chipotle chili and peppers tortillas)
1 tin of enchilada sauce (I use Hatch’s Medium spicy sauce)
1/2 cup of shredded cheese (cheddar or mozzarella work best for me)

Method
Fry the chicken boobie pieces until browned, seasoning with a little black pepper, then place in a heatproof dish to cool for a while. Meantime pre-heat your oven to 200C (400F).

Once the chicken has cooled a little (about 10 minutes should do it), stir in the sour cream and the coriander/cilantro until well-mixed. Take out a lasagne dish (13" x 9", I guess). Now lay out your stack of tortillas (warm them a little in the microwave, if they are stiff). Spoon a generous spoonful of chicken mix into the middle of a tortilla and roll it up, placing it into the lasagne dish. Repeat until all of your tortillas are filled, wrapped and nestled together in the dish.

Now sprinkle a little cheese over the tortillas, then pour on the enchilada sauce (I use about 3/4 of the can of sauce, but you pour on however much you like). Top with the rest of the cheese, then bake in the oven for about 30 minutes. Serve with a fresh green salad! 2 tortillas with salad should feed 1 person (unless it’s my husband, who forgot to eat lunch, in which case he will eat 4 and ignore the salad altogether)! :smiley:

Haze, I know where you’re coming from… There wasn’t a whole lot of fun or *appreciation * this weekend in TVLand due to extremely high temperatures and somebody not putting in the window unit a/c yet. :smack: As a result of the heat, I slept on the couch and not very well at that. I was expecting to sleep better when I got home, but for some reason that didn’t really happen either. I kept waking up every couple hours having mini-anxiety attacks or something. Oh well. At least when I get to work the shop will be air conditioned.

Mmmmm, enchiladas sound yum. Although maybe not for breakfast. (Well, if I had leftovers…)

I won’t bore y’all with my 3 three rescue calls this weekend, but I will grump about using up the gas in the Foomobile getting to them. I barely made it to the [del]den of thieves[/del] gas station in Suffolk this morning; a 25 mile trip on fumes.

Oh, Firday afternoon I was in Wally*World, and ran into the Fire Babe, my gym buddy that’s in the Suffolk Fire Marshall’s Office. This morning, I had to tell her I likes a girl in uniform, and gave her a big ol’ stage wink. She just about swallowed her head grinning.

Funny OP, Swampy! We had chicken for dinner, too! In the form of King Ranch Chicken. Yummy cheesy goodness, mmm.

King Ranch Chicken for the uninitiated:

1 whole chicken, cooked and shredded into bite size pieces
1 lb Velveeta, grated (just push it through the large holes of the grater! :D)
1 can cream of chicken soup
1 can cream of mushroom soup
1 can Ro-tel tomatoes
15-20 corn tortillas (less than a pkg of 24) - cut in half

Preheat oven to 350°.

Mix soups and ro-tel together. Spread a small amount in the bottom of a 13x9 pan. Place a layer of tortillas in the pan, with straight edges on the sides. then add 1/2 the chicken and 1/3 of the sauce, and 1/2 the cheese. Layer tortillas again, then the rest of the chicken, then 1/3 of sauce and remaining cheese. One more layer of tortillas, and cover with remaining sauce. If it doesn’t look like enough, mix salsa in with it. Cover completely so the tortillas don’t dry out. You can add shredded cheddar on top if you want.

Cover with foil and bake about 40 minutes. Remove foil and bake another 5-10 minutes to brown a bit on top. Let sit a few minutes to firm up, if you can stand it. We usually just eat it all gooey!

This could be arranged. Of course, if this heat wave continues, there’s a good chance that the gelato would start to melt en route, in which case we’d have no choice except to eat it right then and there. I’d hate to be the bad guest who show up with melted gelato, after all.

Stoopit cats decided that they both needed to throw up last night, leaving a rather inconvenient 1hr interval in between their performances. I think I got about 4 hrs sleep in total, since I just couldn’t get back to sleep after cleaning up the second puddle of kitty hork. Grrrr.

No chicken since Friday here. But I did try The Pioneer Woman’s Favorite Salad , and I think it just became my favorite salad too. It’s really really good and really really healthy. And really really good!

Saturday we went to the new grizzly exhibit at the zoo. They did a great job building it. The bears have lots of room, but they were all right up near the glass, playing and swimming and just generally being crowd-pleasing and photogenic. There are also new wild boars, Amur leopards, and sea otters. Plus, in the rest of the zoo, there were baby prairie dogs, baby meerkats, and a baby takin. Cuuuuute!

Then we went to the Tibetan buffet for lunch. YUM! They have this amazing fried okra with curry that’s just unbelievably good.

Yesterday I baked cookies. The pecan chews that are already on the blog, some butterscotch shortbread for Mom for her birthday, and some “fudge-aroons” that were way too much work. But I think it satisfied my need to bake for a while. At least until next weekend when I’ll bake some sort of cake because both my manager’s and boss’s birthdays are this weekend. I had a recipe for a coconut cake that was really good and that I haven’t done in a while. Maybe I should make that. Or maybe something with chocolate since everyone likes that. We’ll see.

I think the databases are finally almost updated! It sucks to get to work at 8 and not be able to do anything until after 9:30 because you have to wait for new data. Bleh.

Anyway, it’s back to work for me. And Morgyn (by the way, do we have a nickname for Morgyn?), I theoretically do legal, except that lately it’s mostly been government and odd stuff stuff (since the D.C. firms pick up a lot of odd work, so many national headquarters of agencies/organizations being here). As in lots and lots of congressional [del]drivel[/del]committee hearings, national organization board meetings, day-long workshops, etc. And even the odd deposition now and then, but no actual courtroom stuff (other people do that, but I prefer not to any more; I’ve done enough of that in my time!) This one is DOD inspector general, which means it’s full of military acronyms, which means it’s driving me nuts. Thank heaven for Google. And by the way, these days it’s not a Dictaphone; it’s either a multi-channel, multi-speed transcriber (with serious noise-reduction headphones attached), or else transcription software for those who record electronically. And I use so many shortcuts you wouldn’t recognize what comes off my fingers until it magically turns itself into real words. That’s how I don’t burn my poor fingers out!

Okay. Back to the salt mines. Everybody stay cool and out of the sandstorms, tornadoes, etc. today!
