I’m not remembering it well and I might very well be wrong (likely), but though she was at the table I got the feeling she wasn’t The Most Important Thing in his life any more.
Based on what Logan said later, they broke up in the intervening years, but her presence seems to indicate that they’ll make another go of it.
Yeah, it’s the entire point of Deadpool’s interview with Happy. Vanessa (Morena Baccarin) wanted Deadpool to be more than just an anti-hero, but someone that mattered. He didn’t manage that, and ended up working with Peter. Their relationship ended at some point before that, and at Deadpool’s birthday party, she admitted she was seeing someone from work.
I think it’s in the very beginning where Deadpool uses Cable’s timey-wimey bit to save her - he actually spent the entire second movie trying to die to be with her. The retconning he did was what drew the attention of the TVA in the first place. Originally, he was just supposed to be Voided for it a la Loki, but was given another chance by Paradox.
He sacrificed his life to save Russell from going down a dark path in life, and then used a time machine to save Vanessa, but what has he done for anybody lately?
There is no refresher, their relationship ended in between movies apparently.
They specifically said that after he was rejected by the Avengers, he gave up on being a superhero, became despondent, and couldn’t keep their relationship together. They still cared for each other, though, and he said specifically that she, along with his other friends who were there for his birthday, were the most important thing in the world to him. At the end of the movie, they hinted that they were getting back together.
That’s two moments; Colossus says you need at least four to be a hero.

It was my understanding that Cassandra Nova actually caused Wade and Vanessa to break up.
When Cassandra was messing with Wade’s head, she was playing with the timeline of his memories. She saw the conversation Wade and Vanessa had years ago, about the way their relationship was going, and Cassandra implanted the belief that Vanessa told Wade he would never really matter (or whatever it was she supposedly said). That crushed Wade, and he left as a result of that remark and stopped being Deadpool. Which is why he was trying to sell used cars with Peter as a career.
When Cassandra was playing in Wade’s head, and he “saw” the conversation again, he realized Cassandra had messed with his memories. He said “She (Vanessa) never said that” in a tone of realization at the end of that scene. And when Wade left the relationship, he and Vanessa both did the usual “never talk about it again” trope so common with misunderstandings in TV and movie relationships.
I’m willing to be wrong about this, but that’s how it seemed to me.

An interesting point of view! Thanks for taking the time to explain it. Cassandra def had some scary superpowers (like yanking one’s skin away), but her meddling in the psychology of a person is pretty scary. She did look good with a bald head though, I thought. Something very arresting about that look, but scary.

I didn’t see that as her effecting reality. I saw it as her taunting him with his worst fears Freddy Kruger style since she could read his mind and learn how to hurt him the most.
She reminded me of the woman from the first Star Trek movie.

I don’t think Cassandra Nova was altering what really happened - she found the real memory of their breakup, and manipulated the memory to make Vanessa be more awful, but she didn’t change anything that had actually happened before that point.
