Honoring My Favorite Uncle (Help Dessert) FAST Plz

Just pulled into the HEB. He fractured his hip a few weeks ago and is doing poorly. He’s on my mind. Need dessert idea. Outside bbq shish ka bob’s,steak, shrimp and all the veggies, with free flowing tears. He 91 and need to figure out dessert Truth is I can’t stop crying. The fiddler on the roof and him and my dad when they got their pilots license and the excitement and the trips we had.

Ok I’ll wipe off the mascara and … What’s for dessert? He never complains and is always cheerful I’m going to finish my coffee and put a smile on … Sorry… If it helps he is Italian.

Thanks .

I’m so sorry about your uncle, that’s so hard. It depends on what he really likes but maybe if you have good fruit, maybe a nice trifle? Sponge cake, whipped cream, fruit, jam, a little sherry if it’s allowed, looks so fancy but not really all that much hassle and shows you cared to do something kind of elaborate.

Now that’s love and it ain’t trifling but that dessert presents so beautifully it’s not trifling at all!

I’m feeling close to tears myself, make the cake / dessert, cry for your Uncle, he’ll smile when you present it.

Does he like budino? I looked up Italian flan and found this name. Here’s an easy peasy flan recipe that looks very pretty when finished.

Tiramisu?

Panna cotta?

Cannoli?

Hard to say. So many to choose from.

Peach cobbler. All my best to you, your uncle, and your family. https://www.foodnetwork.com/recipes/trisha-yearwood/easy-peach-cobbler-recipe-3381762

Tiramisu! With an espresso to sip.

Lavender Vanilla panna cotta.

I add 1/2 tsp lavender to the cream as it heats in a muslin bag and top with raspberries, either fresh or a ganache.

I saw the fruit replies, well HEB had a big container of washed, cut strawberries and blueberries on sale. I bought heavy cream and angel food cake. I whipped the heavy cream with Ameratta. I served the fruit and Ameratta cream each in a chilled bowl. Then sliced the cake and put it on a pretty plate. Cover everything up with saran wrap.
I never measure any thing. If it feels and looks right  That’s what you getting. We were a hungry bunch everything was eaten, there was plenty.

I mixed the cherry tomatoes, onions, peppers, mushrooms, chopped garlic, olive oil, black pepper, oregano, a little salt. I sauted them a little while and finished them in the oven so a little roasted and caramelized for flavor. Boiled a big pot of fresh corn on the cob. I wanted the veggies to be tender so the older people could enjoy them and they wouldn’t be so firm.

Earlier in the morning I went to the garden and picked, cucumbers, tomatoes, onions and jalapenos. I finely chopped them.
Season to taste with salt, pepper and a little garlic powder. Nothing else. I wanted it to be really cold. Finished that.

I de-seeded the jalapenos, cut away the white vein saved it for the chickens with the cucumber peels, and whatever was in the 2 refrigerator’s you reorganized that was passed it’s prime.

Remember the mint you planted in the spring somewhere in the yard? First find the scissors that someone moved. Make a cup of Expresso and add some anisette til you think it’s just right. Then eat the last slice of chocolate pie that SOMEONE HID ON THE BOTTOM SHELF, ALL THE WAY IN BACK. Eat it with the Expresso you made and call it lunch.

Then take 10 family sized tea bags, cold water, and the biggest pot I had. Plus 1 more bag tea for the pot.
Slowly bring to to a rolling boil, turn off, cover and let it cool. Take 3 big pitchers put a quarter cup and just a little bit more of sugar in each of the pitcher’s. Add cooled down tea split evenly and top with water, stir. Put in the fridge to chill.
Then slice into wedges lemons, limes the 2 oranges you found re organizing the fridge.

Take a shower, get dressed, stop at Starbucks get a triple Expresso and 2 chocolate cake pops. Sit in the parking listen to the the Beatles air-conditioning on high. Watch the cops go by, the ambulance go by, then the firetrucks go by all the sirens and lights on. Then take long way to the store through the several neighborhoods. Pull into HEB and pat yourself on the back, finish your coffee, check the Dope post about dessert. Be very greatful you missed the wreck and the traffic jam that is still there.

Home again,
Season the shrimp with Cajun seasoning, a little oil and garlic powder and paprika. I had already seasoned the beef skewered both.
I bought fresh baked Italian bread, I sliced in half added fresh garlic, oregano mostly olive oil but added some real butter, oh… a little bit of fresh ground pepper, what else sounds good ? Then I slathered it on the bread. I looked and  I remembered the 3 cheese mix of Parmesan, asiago, and Romano finely grated. Ok sprinkled it on. Hmmm. I have grated mozzarella, I put on too. Hmm … How about ground oregano, and for some color… Paprika and a light sprinkle of dried parsley.

We ate outside on paper plates clean up was easy. I slept late and put most of my plate away to eat today. I never eat when I cook a lot. I enjoyed my salad and ate the rest of my dinner for lunch today. We sure drank a lot of iced tea, less than a half of pitcher left. I just realized there’s a new washer and dryer in the laundry room. Noone knows nothing. I guess when I was gone yesterday someone snuck them in. Roommate knows nothing, Uncle knows nothing, and the dog ain’t telling. I don’t even know what happened to the old ones.

Good things should always happen to the cook.

Oooh, that sounds SO lovely, with so much love in every bite. I’m glad you’re feeling better about things–cooking is such a source of comfort, isn’t it? I mean, everyone talks about comfort food but comfort cooking is also a thing. And all that love came swirling back around and turned into appliances–who knew THAT could happen?

When stressed out cook, or clean something. We talked really late and laughed told stories and secrets. I really enjoy cooking for people I really care about.

Last night I got the family limoncello recipe, and the pasta fazul soup recipe. My uncle says I better tell my Italian sausage spice recipe while I’m thinking about it. We had a good time.

I always fix everything if it’s economical and cheap enough.
