One of my favorite driving CD’s is Johnny Winter’s, Second Winter, with his copy of Highway 61.

As far as soundtracks go, Casino and The Blues Brothers 2000 are both good.

A recording of Ghost Riders in the Sky might do…I’ve heard the versions by The Ventures and “The Legendary Stardust Cowboy” recommended.
