Thinking of getting an ipod touch. Will it be able to download from any site except itunes. For instance, can I add my CD’s to the touch. As for video downloads, can that be done from free internet such as youtube, and other free sites, or is it only itunes again.

Getting media from any source other than the iTunes store involves some manual work.
You can rip your CDs easily (iTunes does it), but adding YouTube videos requires capturing them first, and then converting to an iPod-playable format, and importing into iTunes. The touch may be able to play YouTube video directly from the web (the iPhone does), but that only works if you have a WiFi connection at the time.
You use iTunes to load up your Touch, but you do not have to buy your music there. You can rip your CDs to iTunes to add them to your Touch.
If you are in an available wireless network then YouTube is one of the pre-set websites on your Touch. When you have wireless connectivity you click on the button to go straight to a portable device-friendly YouTube.
The Touch plays video files in m4v format. If you already have videos on your computer you can probably convert them - I use a program called HandBrake.
But for other applications and whatnot, you will have to get those from iTunes unless you jailbreak your Touch, which I don’t know anything about because I’ve never done it. A lot of the apps are free from the iTunes app store though.
